Do you provide customary cakes, such as Croquembouche?
No

Do you offer private tastings or open house tastings?
Cakes by Carolyn provides private tastings at times convenient to the bride and groom. 6 - 8 flavors of cakes and fillings are provided at the time of tasting.
What are your tasting hours?
A strong effort is made to conveniently accomodate the schedule of the bride and groom.
Describe how you price, such as by slice or by tier, for your cakes?
My cakes are priced by the serving. Pricing includes 3 layers of filling per cake slice (called "torting"), mousseline buttercream icing and a thin layer of white chocolate fondant covering the buttercream layer. Most quotes are all inclusive excluding tax and delivery.
Does the price include the top tier of the cake?
The top tier is NOT included in the number of servings and therefore, is not included in the total price of the cake. A pink colored cake box is provided to the caterer for packaging the cake after the reception.
Do you offer custom cakes, or do you work with pre-designed styles?
My cakes are all custom designed during the consultation. Any desired theme, color, invitation, dress design, etc. can be taken into consideration. Any special requests of the bride/groom are taken into consideration, resulting in a beautiful cake reflective of the wedding day. I will also work with the bride/groom should a specific cake style/design be desired.
What (if any) special ingredients, such as fresh fruits or farm-fresh butter, do you use in your cakes?
The cake batter is sour-cream base resulting in a very moist cake. The icing used is a "mousseline" type icing made only with butter, no shortening is used. The majority of cakes are covered with a very thin layer of "Choco-Pan", a white chocolate type of fondant which gives the "fondant" look but without the heavy taste. Shortening - powdered sugar icings are used ONLY upon request by the client.
On average, how far in advance of the event do you prepare the cake?
All wedding cakes are baked, filled and iced the week of the wedding.
How many cakes do you schedule for a typical weekend?
The number of cakes taken during any weekend solely depends on the complexity of the cake and delivery schedule for that particular weekend.
Will you work with the client's florist to garnish the cake?
Yes, the florist and cake designer should be in contact so that the flowers will enhance the cake. I prefer to place the flowers on the cake myself, as the cake itself is ultimately a reflection on the baker.
What (if any) cake accessories, such as a cake stand or cake cutter, do you rent out?
My clients generally do not request any items which require renting. If so, it can be discussed on the day of consultation.
Do you offer delivery? If yes, how much is your average delivery fee?
Yes, I deliver all cakes. Delivery costs vary depending on the distance and amount of time involved in the delivery.
