About
Etiquette of Chocolate is an artisan chocolate and cake boutique founded by Judy Tan and Jaycel Adkins. Both of us are graduates of the French Culinary  Institute and I am a former intern with Ron Ben Israel Cakes in NYC. All of our cakes are created from scratch the week of your wedding, never frozen! All of our icings are Swiss Meringue Buttercreams. We use modern techniques to design and decorate our cakes, including fondant, sugarpaste flowers, sculpted figures (we are experimenting with this now), silicon molds, and topsy turvy tiers. 

We are dedicated to being the premier cake and chocolate boutique in Northeast Florida by offering the best recipes and craftsmanship to our clients.

Do you offer private tastings or open house tastings?
At this time, we offer private tastings, either in our boutique or meeting the client off-site if she is not able to make it to our area. Whichever is most convenient for her.
 
What are your tasting hours?
Anytime.
 
Describe how you price, such as by slice or by tier, for your cakes?
Our cakes are priced based upon the number of servings and the complexity of the design. Cakes start at $400.00.
 
Does the price include the top tier of the cake?
We do something very unique and special for our brides when it comes to the top tier, which we talk about at the tasting.
 
Do you offer custom cakes, or do you work with pre-designed styles?
All of our cakes are custom cakes. Though many brides choose to incorporate elements from our display cakes into their own designs.
 
What (if any) special ingredients, such as fresh fruits or farm-fresh butter, do you use in your cakes?
All of our cakes are covered in fondant. We pride ourselves on being specialist with this medium. Our icing is a Swiss Meringue Buttercream, NOT blended confectionery sugar and shortening. All of our cakes are made from scratch the week of the wedding, hence they are not ever frozen.
 
On average, how far in advance of the event do you prepare the cake?
The cake is baked that Wednesday. On Thursday we fill the cakes. On Friday they are covered and decorated. On Saturday we deliver them.
 
How many cakes do you schedule for a typical weekend?
We value quality, not quantity. We normally are commissioned to create 3 to 4 wedding cakes, per weekend.
 
Will you work with the client's florist to garnish the cake?
We certainly can. But we also have the ability to create sugarpaste flowers that recreate the flowers of the wedding for the bride, and she can keep them afterwards!
 
What (if any) cake accessories, such as a cake stand or cake cutter, do you rent out?
Our cakes do not require the use of a cake stand, since each cake comes with a custom stand that we build in our boutique.
 
Do you offer delivery? If yes, how much is your average delivery fee?
We deliver all of our cakes, period! We have gained lots of experience delivering cakes in Manhattan, braving potholes and NY taxi's, so we feel confident. Our fees are all-inclusive. Don't worry, you won't get hit with surprises by us.

Tips and Advice
1. Bring ideas of your own! I think that brides should bring color swatches, photos, etc. of how they would like their cake to look. Don't say that you want green,  but what kind of green. And please, if you provide more than one shade of a color, please tell us which one you want. 

2. Ask for a sketch of your cake. Don't expect a baker to provide a sketch before you put down your deposit, but I think that it should be mandatory to have one, so that you get a sense of proportion, colors, and the overall look of the cake. Don't expect the sketch to be a work of art, just expect the cake to  be.

3. Be open to new flavors. Just don't think of what tastes good. Try to conjure up memories, from childhood or shared between the both of you, that are evocative of a taste. You can be vanilla if you want....but you don't have to be!

4. Be open to what the baker's vision is. It's your cake, have no doubts about that! But, your baker is a professional who...hopefully...has more experience with wedding cakes than you, so hear us out.

5. Please, use a professional baker, not an under the table operation. I'm sure your friend...a friend of a friend.....your mom...your aunt...or whomever is a terrific lady, but they rarely have the facilities to create a beautiful cake. If they don't have a storefront and/or a business license....bride beware.

6. I think that the most important things to spend money on in a wedding are: the dress, the venue, the photos, and the cake. That is what people remember, spend accordingly.
