How We Work
- Complete an inquiry. Here we gather the data - date, guest count, and venue.
- Taste Profile - This lets us understand your vision - your food preferences, budget, and goals.
- Idea Board - This is when the “rough” draft is born. We start putting your vision together!
- Personal Call - We schedule a time to review the vision board and make tweaks as needed.
- Dinner With Funky Fresh - We prefer not to call this a tasting. Rather, it’s a chance for you to meet our team in person and taste our food. Dinner is free of charge, and we encourage you to bring your family or friends!
- Reserve Your Date - No deposits are required.
What to Expect
During The Year - Expect a clear line of communication. We are a click, call, or email away with any guidance or direction you need. We partner with your vendor team to ensure your day is perfect.
One Month Out - We'll connect, gather the final details and send a finalized invoice for payment.
Your Wedding Day - Have fun, enjoy and let us take care of the rest!

Who We Are
Chef John Oliver Evans cooks with style, sophistication and a touch of “Funkiness”. He is the Owner and Lead Visionary of Funky Fresh. His love of the culinary arts began at a very young age, cooking whole hog bbq with his father. He officially debuted his pop-up dining experience in Wilmington, followed by working alongside notable chefs in the Raleigh area. He then became a chef for a national pork chain assisting in their national food shows. John Oliver later officially opened Funky Fresh and began to focus specifically on weddings.
His wife, Pamela Evans, is the Lead Coordinator for their team. She handles all things communication and logistics and makes sure you have a smooth wedding journey. She worked as a Financial Advisor for RBC Wealth Management for 17 years. As their business grew, she transitioned full-time to Funky Fresh six years ago. Because of her background, she understands and appreciates the financial commitment weddings take and works with our couples and their families to make sure their vision is executed.

One of the things that meant the most to us was how attentive Pam was throughout the wedding. She was constantly checking in on both me and my husband, making sure we had everything we needed and that our expectations were being met. It allowed us to relax and truly enjoy the day.
The food was absolutely delicious, the staff was professional and wonderful to work with, and they truly thought of everything. Every detail felt intentional and well-executed.

Pam and her team were an absolute dream to work with for our Duke Law Family Weekend event! From start to finish, she went above and beyond to accommodate our needs, ensuring everything was seamless and stress-free for us students. Not only was she incredibly generous, but her kindness and professionalism made the entire process a joy. Even the venue itself was impressed by her work and kindness.
And the food—WOW! The grazing tables she made were beautifully presented and absolutely delicious. We love how she mixed sweet and savory elements throughout different parts of the tables and it looked stunning. Our guests devoured everything, and we received so many compliments throughout the event. We requested some heartier food and the meatballs and shrimp cocktail she included separate from the grazing tables were SO GOOD!!!
If you're looking for a caterer who truly cares, delivers incredible food, and goes the extra mile, look no further than Pam. Funky Fresh is an amazing catering company! Their food is always delicious, beautifully presented, and served with a smile! Pam and John Oliver are a great team and they provide a wonderful food experience from the pre-wedding tasting all the way to the end of the wedding reception dinner service. You will undoubtedly be pleased with your selection of caterers if you go with Funky Fresh!
Please don't confuse Funky Fresh with the "street trucks" commonly associated with food trucks. They have a mobile kitchen in a truck so that everything is prepared fresh on site. They are full service, sit down or buffet. The food is beyond imagination. We can't wait to have them here again. Yum
