Chef Charles D. Paladin Wayne started the Catering company on August 31st 2005. With 35 years in the restaurant/hospitality business, over a hundred Wine Dinners, and quite a few Weddings in the mix, it was as good a time as ever to branch out on my own. In the past three years of business we have serviced 60+ weddings and 160 other events. Our marketing has been strictly word of mouth, and our wine community has kept us very busy. Our success rate to date has been 100% with our clients as well as the venues we have worked in. We are staffed with a proffessional, hard working, detail oriented group of people who thoroughly enjoy our mission. We are capable of handling the small(50) parties to large (350+). My experience as a Chef , traveling the world and working with 15+ cuisines as well as our diverse american food styles has given us the flexibility to offer a pleathora of styles and choices. As a winery Chef for the past 13 years my understanding of food and wine pairing has added another dimension to the business. Paso Robles is a popular and large wine community of over 180 wineries, so this has been a natural draw for wonderfull weddings and events. I hope you’ll look us up when considering your vendors.

The most common advice I offer is regarding budget, number of servers, and finding out what is included in the quoted price. Our menu prices often include services/items that are an extra charge with most companies, there is a value there of up to $15 to $25 per person in some instances.
For full service events we staff 1 server per 10-15 guests, buffet 1 server for 20 - 25 guests. Our commitment to great service is as strong as our commitment to great food.
Included in our quoted price is:
Pre ceremony beverages and non alcoholic beverages. Sparkling water and or specialty beverages do have a small cost.
1-2 servers dedicated to the Bride/groom and wedding party through whole event for food/beverage.
Children under 10 (up to ten) can be fed for free.
No cake cutting fee.
No corkage for pouring wine/beer.
Set up and tear down of event.
Arranging rentals.
Consultations from the beginning to completion of services.
