Chef Charles D. Paladin Wayne started the Catering company on August 31st 2005. With 35 years in the restaurant/hospitality business, over a hundred Wine Dinners, and quite a few Weddings in the mix, it was as good a time as ever to branch out on my own. In the past three years of business we have serviced 60+ weddings and 160 other events. Our marketing has been strictly word of mouth, and our wine community has kept us very busy. Our success rate to date has been 100% with our clients as well as the venues we have worked in. We are staffed with a proffessional, hard working, detail oriented group of people who thoroughly enjoy our mission. We are capable of handling the small(50) parties to large (350+). My experience as a Chef , traveling the world and working with 15+ cuisines as well as our diverse american food styles has given us the flexibility to offer a pleathora of styles and choices. As a winery Chef for the past 13 years my understanding of food and wine pairing has added another dimension to the business. Paso Robles is a popular and large wine community of over 180 wineries, so this has been a natural draw for wonderfull weddings and events. I hope you’ll look us up when considering your vendors.
