History Of The Taste Nerve Impulses


A study of the electrical properties of the taste system has revealed that the chemical stimulus is probably adsorbed to the microvilli of the taste cells. The binding strength is about 1-2 Kcal/mole. Electrostatic interactions are dominant for salts and acids, while hydeogen bonding and hydrophobic interactions are important for sweeteners and bitters.

Adsorption of the tastant molecule to the taste receptor eventually leads to an increase in permeability of sodium, calcium, or other ions at the membrane near the base of the cell where the nerve connects. This then leads to nerve stimulation followed by a series of nerve impulses that travel toward the brain. The frequency of nerve impulses is related to the magnitude of
TASTE SENSATION!!

Not all the taste cells are alike. In fact, each reacts a little differently toward a seris of chemical stimuli. One may be very reactive to sugars and less so to other stimuli. Others are more reactive to other tastans. The activities of a number of taste fibers are necessary for the brain to be able to determine the exact quality of a TASTE SENSATION !!
