Your Best Recipes

Just for fun, because we're prepping for a charity bake sale tomorrow, I thought we could all share some of our best recipes!

So let's hear it ladies and gentlemen! What are some of your go to recipes for breakfast, lunch or dinner? For the big game? For game night?

I'll start with an easy one -- pizza roll ups. I make two kinds -- pepperoni and white spinach.

You start with crescent rolls, sprinkle some mozzarella cheese on them. Then you add pepperoni slices and roll up, or for the white spinach, add a dollop of ricotta cheese to each roll and some spinach (tear it up to fit -- remember, it'll shrink when you bake it) and roll up.

Bake at 375 for about 10 minutes (or what until they're golden brown) and serve with some marinara for dipping!

These are great snacks for a game night or small get together. I've served them at Festivus a few times.

    My FH's favorite thing that I make is Man Dip... its super easy and cheap:

    1 packaged roll of sausage (i like mild, he likes spicy)

    1 can rotel

    1 package cream cheese

    Brown sausage in pan until cooked, turn to low and add rotel and cream cheese. When the cheese is softened enough to be stirred, transfer to bowl and mix well. Super easy!!

    I also LOVE LOVE LOVE hummus dip:

    1 can chickpeas

    1 container original flavor greek yogurt

    Paprika, salt, and pepper.. mix in food processor until creamy!

    I hosted a brunch and had found a Pinterest recipe for bacon egg cups -- since I love both bacon and eggs, I had to try it!

    Spray the cups in a muffin tin with a non-stick spray and line the cup with your bacon. You can put some toast or hash browns at the bottom if you'd like, but I kept it simple. Once you've created the bacon sides, fill it with whipped eggs, about half to 3/4 full -- the eggs will rise. You can also just crack an egg in to it to make it sunny side up -- not my fave. Oh, and I forgot cheese, another option.

    Bake at 350 for 30-35 minutes (gotta make sure that bacon is cooked!), scoop out with a knife or spoon and enjoy a tasty breakfast/brunch bite(s)!

    For dinner I love to make Mexican casserole.

    Prepare ground beef as if you were making tacos

    Add in whatever veggies you like ( I usually add in green beans, Mexicorn, and sometimes Rotel)

    Top with cheese and bake at 350 for about 20 minutes

    Serve with sour cream and tortilla chips

    Very quick to make and delicious!

    Spinach Stuffed C

    1 (10 ounce) package fresh spinach leaves

    1/2 cup sour cream

    1/2 cup shredded pepperjack cheese AND feta cheese

    4 cloves garlic, minced

    4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness

    1 pinch ground black pepper

    8 slices bacon

    Directions

    Preheat the oven to 375 degrees F (190 degrees C).

    Place spinach in a large glass bowl, and heat in the microwave for 3 minutes, stirring every minute or so, or until wilted. Stir in sour cream, pepperjack cheese, and garlic.

    Lay the chicken breasts out on a clean surface, and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach, then wrap each chicken breast with two slices of bacon. Secure with toothpicks, and arrange in a shallow baking dish.

    Bake uncovered for 35 minutes in the preheated oven, then increase heat to 500 degrees F (260 degrees C), or use the oven's broiler to cook for an additional 5 to 10 minutes to brown the bacon.

    I've made little egg muffins before, similar to your bacon & egg cups!! i went nuts and added cheese and spinach and onion... they're so good and make such a good snack Smiley smile

    Some tips are to cook the bacon a little before you wrap them over the chicken.

    ALSO...after you put everything together and cook it, put it in the broiler for 5 minutes to make the bacon crispy Smiley smile Enjoy!

    @Reenski It was fairly easy! I got the recipe from allrecipes.com (where I get most my recipes from) but I added my own kick(red pepper flakes and feta cheese etc.) to it! Smiley smile I thought it was as delicious as it looks and My FH and my sister were very impressed!! Smiley laugh

    My Best Cookie Recipe

    21 oz coconut (7 oz toasted)

    1 can coco lopez

    1 can eagle brand milk

    1 cup flour

    1 egg

    1 tsp vanilla

    1/2 tsp almond flavoring

    I throw in about 1/2 bag of mini chocolate chips

    Bake @ 350 for about 8

    Reading these so far has made me really hungry lol

    Parmesan pecan crusted tilapia. Ingredients 3 quarter cup freshly grated Parmesan cheese 2 teaspoons paprika 1 tablespoon chopped flat leaf parsley four tilapia fillets about 1 pound ,1 lemon cut into wedges . Quarter to half cup crushed pecans. Directions heat oven to 400 degrees in a shallow dish combine the cheese with the pecans, paprika and parsley and season with salt and pepper. Drizzle the fish with olive oil and dredge in the cheese mixture. Place on a foil lined baking sheet and bake until the fish is opaque in the thickest part about 12 minutes. Serve to fish with the lemon wedges

    My lasagne w/cheeses from Whole Foods: mild cheddar (cut off the block), hand dipped ricotta, fresh smoked mozzerella, aged provolone or boar's head picante provolone, monterary jack, parmesan, lasagne or eggplant & zuchhini (low carb), hot Italian turkey sausage & ground turkey or beef, onions, garlic & grn pprs. some for meat mixture, some for your sauce. Mix all cheeses (shred 1st) w/2-3 eggs, w/fresh chopped parsley, salt & pepper. Brown meats, drain, add in sauteed veggies then add sauce. Start your layers w/sauce then noodle (uncooked) or eggplant &/or zuchinni then cheese mixture until you have 2-3 layers. Top layer is sauce & parmesan cheese. Pour in hot water then cover w/foil & place foil or catch pan below & bake @ 350 degrees. Cook until noodles are fork tender (45 min-1 hr).

    Since I am always baking lol I thought I would share a sweet recipie Fudge Brownie Tassies

    1/2 cup butter softened, 1/2 cup semi-sweet choloate pieces, 1 3oz pkg softened cream cheese, 2 tbsp butter, 1 cup all purpose flour, 1/3 cup sugar, sliced almonds, and some almond pieces, 1 egg slightly beaten, 1 tsp vanilla, chocolate frosting of your choice

    Combine 1/2 cup butter and cream cheese, beat on high for 30 seconds. Stir in flour until combined, cover and chill at least 1 hour or until dough is easy to handle.

    Pre-heat oven to 325, shape dough into 24 balls, press each ball onto bottom and sides of mini muffin cup, place small piece of nut into each cup

    In a sauce pan combine chocolate and 2 tbsp butter, cook on low until melted. Remove from heat stir in sugar and vanilla, then add egg. Spoon filling into each lined cup about 1 1/2 tsps into each.

    Bake for 20-25 mins or until pastry is golden and filling is puffed.

    When cool top with icing and sliced almond.

    DH loves this recipe!

    Surprise Dip

    Blend: 1 package of cream cheese (softened-leave on counter for a few hours before), 1/2 cup sour cream and 1/4 cup miracle whip. Spread on the bottom of casserole dish.

    Layer the next items in order:

    -1 jar of favorite cocktail sauce

    -shrimp meat or fake crab

    -2 cups shredded cheddar or mozza cheese

    -1 green/yellow/red/orange pepper chopped (whatever you got and like)

    -2-3 green onions chopped.

    Cover and chill. Serve with either crackers, or especially nacho chips.

    Bumping with the recipe I'll be trying out tonight for the bake sale I mentioned.

    Oreo & Peanut Butter Brownies

    - 1 box brownie mix (8x8 size)

    - 24 Oreo cookies

    - 1/2 cup creamy peanut butter

    Preheat oven to 350 and line a muffin pan with paper liners. Prepare brownie mix according to box instructions. For each brownie, spread about a teaspoon of peanut butter over 2 Oreos and stack on top of each other. Place Oreo stacks in each liner. Spoon 2 tablespoons of brownie batter over the Oreos so it runs down the sides of the cookies. Bake for 18-20 minutes, until brownies are cooked through. Cool completely then serve.

    I'll let you all know how they turn out tonight, hopefully like the picture!
