Wedding cheesecake help!

My FH loves cheesecake and hates regular cake so we decided we were going to have a two tiered cheesecake for our wedding. Now I'm torn between paying a bakery to make it or just DIY it. Do any of you have experience making a tiered cheesecake without any icing? If so how and what did you do? Google has not been helpful for this one.

    Cheesecake has icing?

    you just need dowel rods inside the bottom layered cake to hold up the upper layer. same concept as a regular cake but i would suggest extra rods in the middle as cheesecakes are heavier.

    We had a variety of cheesecakes. We did not tier them. They tasted great and the guests were delighted. Nobody cared that they weren't tiered. More and more weddings are getting away from the traditional tiered cake. You're half way there by having cheesecake. I say skip the tiers and save yourself the money, time and stress altogether.

    I have had cheesecakes both tiered and not (sometimes on that set of 'waterfall' type stand? One of my faves didn't have icing, but three different fruit toppings. It was great.

    They are very heavy; it they are tiered, find a baker who has done this before; it will need more support.

    Here's an idea; my bakery makes a cake called "Polish Cheesecake" (no one knows why.....) It's three thin layers of chocolate cake with slabs of cheesecake in the middle, stuck together with chocolate buttercream. It is awesome, and it always looks like a 'traditional' cake.

    It's not clear how many people you're having, but the reason you're not finding help from Google is likely that you can't do a two tier cheese cake where they actually sit on each other due to the weight. A three tier cake for 120 at my wedding we estimated weighed 70-80 pounds... Cheese cake is denser than cake, so i can't see how they'll stack unless you have them in a tower shape with dowels and a platform, so they're not actually touching each other.

    Just know there's a reason people don't do it, and it's not because no one has thought of it! So I'm with Sarah, don't try to layer them... You'd be better off having a couple cake stands, and separate them... You can play with the visuals. You could do 3... A couples cake and two other tiers, staggered next to each other. Save-on-crafts.com has some gorgeous ones including ones that hold up to 50 lbs.

    And don't do it yourself unless you've got some sort of serious amateur baker hobby going on... You will put yourself under so much stress it's not worth it. I thought i was a very together, chill bride till three days out when i realized how many little things there still were to do. It sneaks up on you.

    What about making a bunch of different sizes? one small size cake for you with your cake topper and then have a bunch of mini cupcake size cheesecakes? I am doing a lot of DIY but the cake is important so if your going to have a lot going on the week before (which most brides do) you might want to have the baker/ someone close to you do it.

    I would not tier a cheesecake on my own. I make cheesecakes every couple months or so because my FH loves them. I would be very nervous trying to put them on top of eachother and really hope they wouldn't sink. If I DIY I would put them on different but coordinated cake stands. To be honest though I would just hire someone who specializes in this. I think I would be stressed making 3 cheesecakes the day before the wedding.

    @celia maybe they use a polish cheesecake? cheesecake made from dry curd cheese. there is also german cheese cake made from quark (fresh curd cheese) and with the eggs separated. then there is japanese cheesecake which is more like a cream cheese flavored sponge cake.

    I would skip the tiers and just have a few cheesecakes, maybe with fruit toppings. Talk to a few different bakeries and get some quotes. We were going to DIY our flowers but went to several florists to get the quote we wanted - it may be worth paying a couple of hundred bucks to have someone else make the cake for you. (Btw, this thread is totally making me hungry. Lol)

    Thanks so much everyone. We are having a small wedding with roughly 50 people. I had seen a tiered one on Pinterest with fruits drizzled off it and thought it was really cute. I definitely think I'll have a bakery do it if we end up doing tiers since the weight is what I was really worried about, but I really like the idea of a lot of sizes all around one with a cake topper.

    What about a two tiered cake with the heavy cheesecake at the bottom and a lighter regular cake on top? Just a thought. Smiley smile

    You had me at cheesecake! I wouldn't care how it got to my table, I would just eat it! I love cheesecake Smiley smile

    Now some serious business, I think you're better off following some of the previous ladies comments: don't stack them. I also like the Idea of having cheese cake on the first layer and then a small regular cake on top (just for the purpose of having something tiered if that's what you want). the other cheesecakes can be in cake stand next to that tiered cake.

    And OMG Cheesecake!

    So I read through all this and now I really want some cheesecake....

    I do not have any other suggestions that haven't already been mentioned. Again, I think a baker is your best bet.

    Is this what you were talking about? My mouth is just watering.

    My mom had tired, iced cheesecake at her wedding, I would use a bakery. The cream cheese can really make you sick if not stored properly.

    Yes! That was the exact cake I had seen and fell in love with. I'll call around and get some quotes but in the mean time I may have to just make a little test cake one weekend to see if it's even feasible and of course taste test it Smiley smile
