Salad Plated when Guests Arrive...Where to put napkin?

Hello Everyone - I am struggling with how my table is presented when guests arrive. I am doing a sit-down dinner, and I wanted to do a folded pocket napkin with a sprig of lavender/menu in the pocket. I'm running into an issue because I believe the caterer is going to plate the salads at the table when the guests arrive. Is this normal? I kind of wanted the wow factor of the napkin and place card. Any suggestions?

    You could have napkin folded and under plate do it drapes off the table...doesn' help with menu. You could ask caterer not to plate salad but that may be a time or cost issue.

    I would ask the venue not to serve the salads until after guests are seated.

    Family style can be weird, especially with centerpieces.

    Usually, even at family style receptions, the salad is served plated. It is a bit weird for the salad to be already at the table when guests arrive-- I'd ask them to have it served after your entrance, if the timeline will allow it.
