Diy- cake vs cupcakes vs mix (and maybe buying)

Having a very DIY event- trying to have minimal help on hand both to keep things simple and costs down. Please I don't want to hear about DO NOT DIY FOOD, this is what we are doing.

Looking at cake options-

1. Cupcakes- Pros: they would not need a person to cut them. Less waste with just the paper cup. Cons: More time-consuming (I think) Don't have a good vision yet for a non-cheezy looking setup

2. Cake- Pros: easier to make, and make formal-looking. Cons: is going to need someone to cut the cake unless we provide a DIY knife (was thinking, no way, but then also every time I go to an event people are wanting less cake anyway, that way people could just get what they wanted. Mostly feel it's a bad idea tho.)

Also how much to DIY. I've experience (and love!!) cooking for similar-sized crowds, including at our probable venue- of course I read everyone being like nononono to DIY especially week of. I do want to see what areas I can either do in advance or minimize time/effort. I could just get something, even just the cake layers, from Costco or Sam's etc, or even Whole Foods. Or bake the cakes, hire a client of mine who happens to be a cake decorator to do that part. A lot of people here tho have food sensitivities and frankly I make much better stuff, just sayin. Would really prefer not to serve a factory, gluten cake to everyone. And of course, yeah it could cost less.

For those who have gone DIY for cakes or cupcakes what was your experience in terms of making stuff beforehand- did you freeze any parts (cake or cake+frosting), if so, timing, etc. Thank you!!!

    I'm sorry. I'm confused. When you say DIY do you mean that people are bringing the items or are they making the items there or are you DIY? In regards to your post actually because I used to have a cake baking and decorating side business cupcakes are much easier. If you think about a cake, it's much more time and effort to make the frosting and decorations look good where for a cupcake for the most part you put the frosting in a frosting bag with a certain tip and just swirl the icing around. I love baking but if I'm going to go between decorating a cake and cupcakes, I would much rather cupcakes as they are less time-consuming and a lot less can go wrong because really with a cake before you decorating frosted you're supposed to let it sit for an hour or so and you can also risk air bubbles on the side of a cake where with cupcakes you don't have that issue.

    If you do either cake or cupcake I have the best recipe mod that makes them so amazing and moist. Follow whatever directions are on the box. Add one extra egg. Use milk instead of water same amount. Use melted butter instead of oil and double the amount. Add one 8 oz pack of pudding mix in a similar flavor. My friend does cakes and this her go to it makes them OMG amazing! I would do cupcakes, easier to distribute and decorate if your going to DIY

    I think some additional context that could help is the size of your event. 36 cupcakes (3 pans of 12) is a lot easier than 144 (12 pans of 12) to store and keep fresh.


    Not DIY, but I will likely be doing cupcakes instead of a cake for my wedding because of some of the reasons you said, like no cutting and easy portion control (most can handle one cupcake). I have seen on forum posts you can get cute tiered shelving to display the cupcakes on. I've had trouble posting pictures to these forums before, but a quick Google image search for "wedding cupcake display" came up with a few different styles. Some more like bleachers (a series of long rectangular shelves, each higher than the next) and some more round like you'd place the tiers of a more traditional cake.

    Yeah that won't work, probably looking at gluten free and dairy free, the pudding for sure is a no go.
