I prepped and dressed out my first HOG at the age of 16, I remember that day as if it were yesterday. That was a long time ago and it was cooked in a real pit, how do I know? I had to dig the hole, that was a long day on into the night. Since that day I've spent a whole lot of time in between Mississippi and my home Memphis, TN under the direction of two people whom you folks would call BBQ Masters perfecting the art of Authentic Southern BBQ, but to me they were family. Now what I do and how I do it is a process that I can't explain, but if I had to tell you something; it would be that my barbeque sauce has 18 ingredients in it and water is not one of them, with all that said and done let's eat!
