Big Papa BBQ LLC is a family-owned barbecue food truck catering to weddings and other special events in Colfax, Wisconsin, and the surrounding areas. This business is a tribute to the legacy of Fred Sevier, or "Big Papa," as he was known to his family and friends. Fred was a war veteran who loved serving his community through great food and his specialty barbecue sauce. Though Fred passed away in 2019, Big Papa BBQ is a celebration of his life and the distinctly Southern, wood-smoked barbecue cuisine he loved so much.

Big Papa BBQ LLC specializes in all the barbecue staples that guests know and love, including pulled pork sandwiches, smoked ribs, and mac and cheese. Fred's children and grandchildren run the business today and are committed to keeping his original recipes at the heart of everything they do. They offer food truck and traditional catering experiences, so couples can choose to enjoy a seated wedding meal or have a more grab-and-go vibe at their event! The team is dedicated to providing every client with a completely personalized experience, with special menu requests always welcome. Herbie and Amy Sevier live in Chippewa Valley WI. They have 4 children and are foster parents that find joy in serving others. Herbie is a talented carpenter and pit master. He grew up in Kensett Arkansas. He worked as a skilled tradesman before he "retired" after 19 years to follow his dream of continuing his father's legacy. Amy is a self-professed nerd and loves using her administrative and organizational talents to support Herbie. She worked as a director of operations before "retiring" to do so. They are both very involved with every event Big Papa BBQ serves.
