When do you book food catering?! rsvp timing!!????!

Hey guys! My fiancé and I are getting married on October 23rd, 2027!!! I have the venue, photographer, and DJ booked but I really don’t know when do book food catering???? We know who we want to do it and got their prices and everything, but how far in advance do you book that when it’s so far out from the date and RSVP? And with that being said, how soon before the wedding do you expect people to RSVP? We’re going to send out invitations soon! I know I won’t be able to get away with paying for the exact head count and will probably end up with extra food, but I would love any input on this! Thanks so much!!! ❣️
