So we have decided to do a taco bar for the wedding. We live in New Mexico on the border so enough said Smiley winking We are looking at 150 people. I have ideas for how much quantity and everything but what I need to know is a generic price range for this. FH is going to make up all the meat and we will have a friend who is a caterer make the rest of the prep stuff the morning of so all I really need to know is about how much it will cost. How far out can I make homemade salsas and cut up toppings??

If you were just doing your Rehearsal Dinner with a taco DIY, maybe you could get away with that. But with 150 people, and on your wedding day, you are either doing A LOT of prep beforehand, and the food won't be fresh. OR you will be slaving away in the kitchen on the most important day of your life (thus far). So that being said, I would not recommend doing it yourself.

Also, I don't know the backstory about your relationship, only the bits and pieces added in this post. But, if you have only known your FH for a very short time, I'm sure people in your life have asked you questions like "are you sure?" but nicely. However, this is the internet, nobody really knows anybody, and therefore doesn't feel like they have to sugar coat anything. So although it may come across as rude or negative, they are just saying what people are really thinking.. Sorry to break it to you, and best of luck with the planning.

I'm going with a taco bar as well but I'm getting it catered through Qdoba and it's pretty inexpensive! They will set up and deliver as well as attend the buffet and make sure everything is clean and safe. IMO it's worth it to have that taken care of during the wedding and all I'll be worried about is getting my food! Good luck!

I absolutely could have answered the question too, but I don't want to enable others to kill their family.

^^^Pretty much, what Celia said. I did answer the question with advice that would be useful rather than advice that could harm her family or others.

Now I just want tacos. Between this and all the Chipotle talk, I want tacos.

Heck, OP get Chipotle to cater or Moes. I bet both are affordable!

We don't have Tijuana Flats. Moe's, Chipotle, Taco Bell, and Green Cactus here as well as independent taco places.

Do not self cater or ask friends. Go on yelp to locate taco catering in your area.
They do everything for you way cheaper than a wedding caterer.
