Taco Bar... Good idea?

I am planning on having a Taco bar at my wedding. So far every one that I have talked to that is attending has loved the idea but I cant think of any side dish to go with it or anything to substitute if someone doesn't want tacos. I plan on having taco meat and shredded chicken as the meats and then the usual toppings, with nacho chips, tortillas, and hard shells. After that I am at a loss. Help please. This was supposed to be a small wedding that has turned into a wedding for about 90 people (or so it feels like, i may be over exaggerating.)

    How about a rice dish? Bean dish? You can look online for different Mexican dishes that don't use meats.

    If someone doesn't want taco's they can always substitute the lettuce, tomato, shred cheese, etc. and make a great salad? Provide some bows, salad dressings, and croutons. That way so you don't have to go the extra mile with making another dish

    Google "Texas caviar" and you will find absolutely delish recipes for a great, fresh bean dip! Also, have you considered enchiladas? They're kind of a lot of work if you do the rolled ones, but if you make an enchilada casserole and just layer the tortillas in a big pan with the filling, it's pretty quick to make and can easily be made ahead of time, and reheats really well.

    What kind of meat are you having? If you have others besides ground meat (like chicken breast strips or beef fajita strips), then they can easily make a salad as someone else said. Or nachos.

    Mm. Tacos. Tacos are never a bad idea. Anyway....

    You could also have maybe a soup, like a mild tortilla soup, and they can always make a salad with the fixings. I agree with everyone else with rice and beans. It all sounds delicious and has made me hungry.

    Make it like a Chipotle and Qdoba experience. Have bowls available just in case they do not want tacos or nachos. I LOVE rice bowls. Just a suggestion.

    Rice and beans would make a great side. You could do black beans and refrained beans. If you wanted some additional meats for the tacos, there is always chicken and shrimp. Shrimp tacos are delicious! Love the idea!

    I think it could be fun. The only thing I would add is a vegetarian option. Keep in mind many Mexican foods that seem vegetarian aren't - for example, refried beans often contain animal fat. You could do mushrooms, veggie refried black beans, avocado, etc. I'd ask your caterer for suggestions.

    Also, I'd make sure your buffet table allows for two lines. I did a taco bar once for a conference I was planning, and I noticed it took a long time for everyone to get through the line. That's because you always have those people who have to art direct their taco/salad - the olive has to be placed just so, they need exactly three pieces of avocado, etc. Getting 90 people through a build-your-own-taco line can be pretty painful.

    How about a 7-layer dip and salsa as well. Super easy to make yourself and not pricey. Agree with the rice and beans, and loved the idea of Tortilla soup.

    We are having mexican food with the works (enchiladas, chicken/beef/pork fajitas, tacos, nachos, chips, salsa, queso) and a few of the appetizers are flautas (or taquitos at a grocery store) ours will be stuffed with a mashed potato (kids will love) and mini chimichangas that are just cheese and shredded pork.

    I am jealous! I wanted to do this but FH didn't. I was doing the same as you but also having the bowls for salads. I would add the rice and beans too!

    You could even do 'Walking Taco' by using small dorito and frito bags, then people can just eat them out of the bag...not to fancy though. I thought about doing that, not sure if its too tacky or not?!?!

    Thank u for all the feed back. Now I feel like im doing atleast one thing right! We are having refried beans. Ill probably add some mexican rice, a 7 layers dip, and fixing to make a nice salad. Thank u all! The only vegetarian i know I dont think will be coming now so I dont have to worry about that.
