Seating Charts-how did you identify meal options for guests

I am having a mirror seating chart for the wedding table numbers. I am having two options of chicken and fish and vegetarian as the meal choices. My caterer wants me to have something that will indicate where the vegetarians are sitting since there are less people who ordered that option. I am trying to decide what to do on the tables so the servers will know where they are sitting.

    Name card color? Yellow = chicken, fish = blue, green = vegetarian etc.

    I've worked many many weddings. The easiest thing done for the severs was pretty much a printed copy of the seating chart with the colors on who was eating what in what seat. You just have to hope no one swaps seats.

    I'm required to use escort cards that somehow indicate meal choice so the servers will know. I've considered using different colors.

    Letters by their name C, F or V?

    Maybe you can have a master list just for him with tables and people and then letters by their names to indicate their meals.

    I think color coding either on a print out for the servers and/or on the escort cards is a good way to go.

    I'm considering different color place cards or a color coded embellishment on the place cards to indicate meal choice.

    I was thinking about having a place card at the table with their name and a V for vegetarian. I wasn't sure if anyone had a different idea where I did not have to use a place card. Thank you all.

    I did not have place cards, just a seating chart. I assigned tables, but not seats. What I did was provide the venue with a list of who was sitting at each table and what they had ordered. I had no issues at all.

    I've seen an option of putting a small cow, chicken, fish, etc. shadow in the corner on the card to indicate what the person ordered.
