Non beef dishes: what are you serving?

As an alternative option to beef, if you are serving chicken/seafood/other, how is it prepared? Chicken Parmesan, Breaded fish and chips, something else entirely?

    We will be having an interactive seafood station. There will be oysters, crab legs, shrimp and sushi

    We had 3 meal options, not counting the vegetarian/vegan option. We had a French breast of chicken stuffed with goat cheese, roasted red peppers, and tomatoes and a grilled salmon with a teriyaki glaze, along with the beef dish which was a prime rib.

    In addition to our meat entree, we had pan seared chicken with a rosemary and mushroom demi jus and grilled grouper with a lemon thyme cream sauce.

    In addition to a beef dish, we're offering chicken chesapeake (we're in maryland) aka chicken topped with crab meat, old bay, spinach, onion, and a cream sauce. We'll also have a vegetarian dish, but that's TBD.

    In addition to a surf and turf (ribeye and jumbo shrimp) dish, we offered a parmesan crusted chicken breast stuffed with prosciutto and mozzarella and topped with a sundried tomato sauce. My guests that the chicken dish raved about it!

    We had one beef option and then craved turkey as the other meet option.

    In addition to our beef option, we have chicken paillard and pan-seared tilapia.
