I need some advice from people who have already had the discussion with their venue/caterer about serving a vegetarian option.
We are having a split plate (salmon and beef) for most people, but have a few vegetarians attending. I don't want to offer them basic steamed vegetables and pasta (when everyone else is having an upscale dinner, for which I am paying big bucks). They don't eat fish, so just doubling up on the salmon is not an option.
What should I ask for when I talk to the coordinator and chef to ensure that my vegetarian guests are getting a quality meal? (Some of our passed and station appetizers are veggie-friendly, so I am really just worried about the sit down meal.)
Some specific words to use or categories of dishes to ask for would be fabulous.
