I need some advice from people who have already had the discussion with their venue/caterer about serving a vegetarian option. We are having a split plate (salmon and beef) for most people, but have a few vegetarians attending. I don't want to offer them basic steamed vegetables and pasta (when...

I need some advice from people who have already had the discussion with their venue/caterer about serving a vegetarian option.

We are having a split plate (salmon and beef) for most people, but have a few vegetarians attending. I don't want to offer them basic steamed vegetables and pasta (when everyone else is having an upscale dinner, for which I am paying big bucks). They don't eat fish, so just doubling up on the salmon is not an option.

What should I ask for when I talk to the coordinator and chef to ensure that my vegetarian guests are getting a quality meal? (Some of our passed and station appetizers are veggie-friendly, so I am really just worried about the sit down meal.)

Some specific words to use or categories of dishes to ask for would be fabulous.

    We are having an eggplant rollitini as the option. you should call and ask.

    I'll definitely be asking what will be served and what the options are when we go for our tasting, I just didn't know what to ask for in case they said, "What are you hoping for?" I especially appreciate the ideas for the upscale things to ask for. Our friends are vegetarian, not vegan, but aren't huge cheese eaters, so beans and a variety of veggies (as a fancy napoleon, timbale, stuffed, rolled, grilled, etc.) is going to be a nicer, more appealing option for them than a cheese plate or dish of pasta.

    I am veggie and love Eggplant Parmesan and anything with mushrooms (mushrooms have a nice meaty flavor and are filling) Truffle oil always tastes good on anything and is upscale!
