DIY Buffet Menu?

Im a pretty good cook and since my mother worked as a caterer, I decided to use her experience and advice to make my own buffet! I had contacted several caterers and I simply couldnt fit them into my budget Smiley sad

Here is what I have so far, for a casual evening dinner buffet menu:

Smoked Brisket

Chicken Fingers

BBQ Meatballs

Mini Sausage weenies

Cheesy french bread slices

Dinner rolls

Potatoe salad

Assorted fruit trays

Assorted veggie trays

Assorted cheese/cracker trays

maybe a mini Salad Bar

I wanted something simple that people to could snack on OR dine on. Any suggestions for additions?? FH came up with this, so its obviously geared toward the meatier side of things haha. But i tried to pick things that wouldn't run the risk of causing an allergic emergency (my FH being deathly allergic to capsaicin, so no spicy foods).

What are your menus?!?! Are you plating, or buffet-style? How hard was it to nail it down?

    That sounds pretty tasty to me, but very casual. If that's what you're going for, though, cool Smiley smile I'd add more veggies, though, and maybe a more substantial choice for vegetarians, if you have any coming.

    We're having a cocktail hour with eight passed hors d'oeuvres and a sushi station. Then our dinner is a plated meal with a salad course (red and green cabbage, toasted soynuts, and a ginger-soy dressing); main course with three entree choices (pork, grouper, and vegan) that include rice and stir-fried vegetables; and dessert course with lemon cake and a fruit skewer.

    Its going to be casual since i loathe stuffy, formal receptions.

    We arent planning on alot of vegetarians, but i cant know for sure Smiley smile thanks for the suggestion!

    your menu sounds delicious o_o

    We'll have hors d'oeuvres at each table (as part of FH's idea of an edible centerpiece) but we cant afford to have servers carry them around

    We were thinking items that didnt require refrigeration

    An assortment of olives, toasted nuts and Crustless quiche squares. Smiley smile

    I would add something in there for people who dont eat or like the meat. Even when I was not a vegetarian I was very picky about the kind of meat I would eat. What about a broccoli or corn casserole?

    I would suggest little sandwiches on on rolls. Roast beef turkey etc. I will probably have tomato bacon cups an old pampered chef recipe. If you can you might look into a chocolate fountain to go with your fruit trays and put some salt snacks out beside.

    The local we are using is a summer camp for disabled kids, so it has a full service kitchen that is equipped to handle over 200 people! four large ovens and two refrigerators, and a large freezer! Smiley laugh pretty awesome prep space too.

    as for the food, it will be prepped and set out just before the ceremony, and ive had family members who offer to go early (middle of the ceremony) to get everything set and heated properly.

    Some of FH's older female relatives said they'd love to be in-charge of food. apparently its a tradition for them to be incharge of wedding foods o_o

    As for clean up, i figured most of my trays/plates/ect will be disposable and any food can be boxed and taken home by guests Smiley smile

    That sounds lovely, we are having the same, ours is a backyard bbq wedding, we are having:

    Smoked brisket

    Chicken bbq

    Smoked pork

    Creole Shrimp

    baked beans

    Cornbread casserole

    Potato salad

    Southwestern salad

    Corn on the cob

    Mixed fruit platter (in season)

    Cake

    Pies

    Hello I too having DIY buffet, my wedding is 80max or less. So even when that amount I wasn't going to have food that may taste good when I taste it and then cold day off (been to weddings where that happens). So here is my menu SO FAR

    Soy Sauce Chicken Wings

    Bake Fish

    Boneless Rib

    Bake Ziti

    Rice & Peas

    Mac & Cheese

    Mix Veggies

    Rolls

    Salad Bar

    Pizza Hut Pizza (our fav thing to eat a couple on Fridays, we wanted to share with everyone)

    Fruit Platter

    Candy Buffet

    And........our wedding cake (since we're two girls)...are going two doll cakes holding hands with rainbow cupcakes around them.
