Have you thought about hiring a wedding planning that would be able to help you plan from the US?

Check out BookIt or CheapCaribbean.com. I've booked tons of resorts on there through those sites. I don't know how much research you've done, but Cancun primarily has large one-building hotels and Riviera Maya is primarily where all the sprawling resorts are. If you are looking for all-inclusive adults only: Excellence and Beloved are phenomenal (my parents have raved about them) and Secrets is also good (Secrets The Vine in Cancun is supposed to be spectacular). I've also heard good things about Hyatt Ziva/Zilara (1 is adults only and the other is family-friendly. I forget which is which). As far as time of year, Google hurricane season in Mexico and try to avoid that. I've gone in July and August though and have been fine.

Sorry, I also forgot to add: check out a travel agent. They typically do not charge the customer. They make their money from commissions through the hotels.
