Advice on the Cake

Going to see my wedding cake baker today...any advice from your experience or an experience you know someone has had about the cake?

What kind of flavor?

Are fillings worth it?

I wanted to go old school with buttercream...what are your thoughts?

    Something interesting I didn't think of til later was it I did a different flavor filling for each tier would it cost more? I asked a couple weeks before the wedding and they said that's fine to do for free! So I ended up doing two different flavors.

    I went with three different flavors. The only thing the baker mentioned which might be helpful is to choose a white cake for the tier you are cutting in case it gets on your wedding dress when you cut the cake! Smiley smile

    I did different flavors with buttercream icing and cream cheese icing. They were sooooo delicious.
    Groom's Cake - Buttered Praline with Praline Frosting Filling and Buttercream Icing.
    Wedding Cake Flavors - 10" round is white almond flavor with strawberry filling with buttercream icing.
    8" round is Italian Crème flavor with Coconut Crème Filling with ButterCream Icing.
    6" is Red Velvet flavor with Cream Cheese Filling with Cream Cheese Icing.

    I did all buttercream icing and had carrots cake for the grooms cake since that is his favorite. For the 3 tier cake I did lemon cream on one tier, strawberries and champagne on the other and vanilla bean on the third. They were all amazing!!!!

    Flavor fillings are usually always more. Flavored buttercream is usually standard in the base price. If you are having a big tiered cake I would steer clear of actual fruit fillings; makes the cake more unstable and probably why bakers charge more for it plus the actual cost of fruits. Be aware of the cake tier sizes aka the diameters and ask about what they typically do and if you don’t like what the typically do don’t be afraid to say I want it this way! I stuck with neutral colored cakes because my mom brought up the point that if we did red velvet in addition to other plain colored cake that people would gravitate to the red and then not eat the others. I thought that made a lot of sense so we are doing vanilla cake, lemon cake, and strawberry swirl which are all very neutral!

    When we went, they gave us a list of options denoting what was included in the price and what was an upcharge. We tried 2 cake flavors and 8 filling flavors. We opted to just do chocolate cake all 3 tiers with strawberry filling and vanilla buttercream on the outside. She also asked about the outside (square vs round, decorations, etc). I had pulled some pictures from Pinterest about what we liked, and they also had books at the bakery. Overall, it was a pretty easy process. We were able to get a 3 tier cake with some buttercream flowers on the outside all for the base price, which was awesome.
