Taco Bar suggestions

We are having a taco bar for our late evening wedding - wedding starts at 7, reception at 7:45.. I have chicken, hamburger, beef, guac, sour cream, cheese, lettuce, tomato, onion, nacho cheese, chips, salsa... anything else I am missing??? I have been racking my brain for days and can't think of anything else....

    1- Apparently you are awesome. A taco bar is about the best damn idea I've ever heard. :-| Ever.

    2- I would google taco fillings and see what kind of cool, off the wall fillings you could do. Some fun things like....I dunno...M&M's or something equally strange lol. You could always do more proteins, different kinds of cheese and several kinds of salsa.

    That's an AMAZING idea Smiley smile

    Defintely put out some cilantro and maybe shredded cabbage (great in a taco!) and also a fish option would be nice. A nice grilled whitefish or something?

    Nora....Agreed. A taco bar is the best idea!

    I am totally rethinking this Italian menu thing. After Italian, Mexican is my favorite food.

    Hmm...

    add refried beans, Mexican rise, hard tortilla shells, soft tortilla shells and BEANO.

    Thanks girls. FH & I are doing the very casual (on the beach ceremony and reception at home) wedding... We both look at it as more of a time to entertain and party with our friends (all 200 of them) and let them watch us say our vows... but wanted to make sure that there was plenty to eat since there will be more than enough drinking!

    We have taco night once a week, and my DH loves to put corn in his. Maybe you could add corn and some kind of peppers? japelpenos (sp?)?

    I second the fish. Make sure it's a firm flesh fish so it won't get all bleh when people try to pick it up.

    Thank you, thank you.... I do have the soft shells (Both sizes), hard shells, rice, beans... added all suggestions to list... definetly have to take fish into serious consideration...

    There are some very inexpensive fish(es?) you could use. Just do a little digging. People enjoy fish tacos every day! :-)

    Funny i told my FH that we should have a taco truck and he thot i was nuts! I still want to have a taco truck at my wedding! Smiley smile jalapenos. taco shells would be awsome yum im hungry now

    I am jealous!

    I would actually not have a super-ton of fixings, or I'd make sure there was more than one taco bar. If you have 200 people lined up, futzing around with a dozen toppings, fillings, etc, it's going to take forever to get everyone fed.

    I mean, heck, it takes my DH and me ages to get our taco on even when it's just the two of us!

    @ Shannon - oye - didn't really even think of that... Maybe 2 or 3 bars would be in the works...

    It was either taco bar or grilled (BBQ) chicken.... grilled chicken just didn't sound very good that late in the evening... and I was really worried it would get dried out...

    My MOH just made the suggestion to of a chili verde type filling with pork!!!

    Damn, we are having spaghetti, but now I want to hit Taco Bell.

    Perhaps you can set up the table so that guests can hit the fixings from both sides of the table.

    Definitely have more than one fixings bar.

    At taco bars, salad bars, etc, there are always people who have to "art direct" their food - guac just so, exactly four olive slices, and they make the whole production grind to a halt.

    Soft tacos only would be a better idea - the crunchy kind have to be held upright to be filled, and that is going to make the whole thing take so long that by the time everyone gets through the line, they'll be ready to celebrate your first anniversary.
