Oh boy!!! I am very much domestically challenged!!! Cooking is not my thing what so ever and I am trying to really learn to cook new things. Makes me so sad, we got all new kitchen supplies from the wedding and I dont know how to cook good food with them!!! Only can eat so much dry chicken and yucky rice lol!!! I keep buyin new cook books but everything seems so hard. It hard to cook quick, cheap and have it still be healthy and yummy!!

So I thought what if everyone posted a recipe that their families really loved that was really quick and easy. It might be fun to see what everyone likes to cook and might really help out the few brides/wives like me who just flat out dont know what they are doing in the kitchen Smiley smile

    I LOVE to cook...so I am happy to share recipes!

    Most of the ones I make ofter are from either biggest loser cookbooks or weightwatchers since I am trying to lose weight which means FH has to eat healthy too!

    Buffalo chicken Meatloaf (with my variations)

    1 package ground chicken breast (from meat case)

    2/3 cup oats

    1/2 cup milk

    2 tbsp buffalo wing sauce

    1 pkg of already chopped trinity mix (from produce section usually in a small plastic container )

    1 small package of Feta cheese from the dairy section (i usually get the stroe brand since it is cheaper)

    1 egg beaten

    Mix oats and milk. Let sit for oats to soak in milk. Then mix all other ingredients in. Place in meatloaf pan cook at 350 degrees for 40 mins oruntil 165 internal temperature.

    You just need to relax and stop trying so hard =) I have no recipes...sorry, can't use them, screw it up everytime so I look at the ingredients and throw it all together. I was taught to cook without measuring so when I "measure" something it never turns out right lol

    Go to store by "Oven Fry" extra crispy, eggs and skinless, boneless chicken breasts follow the directions....love this meal...I make corn and mashed potatoes with it. Quick, easy and yummy too

    Easy Chicken Pot Pie:

    1 can Veg-All large cut mixed veggies

    1 can sweet corn

    1 can cream of chicken

    2 cans of Tyson's chicken (it's near the tuna)

    Bisquick

    Preheat the oven to the temp that the Bisquick box has for biscuits. In a casserole dish or any baking dish, combine all of the ingredients except the bisquick. Once you have combined everything, in a separate bowl mix up some bisquick. You can follow the directions on the box for biscuits, but just take some biquick and add some milk until the batter is about as thick as pancake batter/cake batter. You need enough to cover the whole top of it, so I always start out small and if I need more I can mix more. Pour the bisquick on top and spread it out evenly. It is usually half an inch to one inch thick. Pop that baby in the oven until the top is golden brown (usually takes like 45min to an hr). Make sure you leave it in long enough or the bisquick won't be cooked all the way through. It is a quick and easy meal!

    Did you guys get a crockpot? I do that Pinterest thing where I pre-make recipes for the crockpot and freeze them in giant ziplock bags. Then, I defrost overnight and pour them into the crockpot to cook before work and they're ready when I'm home.

    Chicken Parmesan (yummy):

    Boneless skinless chicken breasts (thawed)

    Italian style breadcrumbs

    2-3 eggs (depends how many breast you make)

    milk

    flour

    olive oil

    spaghetti sauce (1 big jar)

    penne pasta

    italian shredded cheese mix

    First use a meat mallet to hammer the chicken breasts until they are about half an inch thick. They get really big when you do this, but it makes then really tender and they cook faster.

    Take the chicken breasts one by one, coat them in flour, then dip them into a mixture of eggs and milk, then coat them in the breadcrumbs.

    Get a big skillet ready by heating up about half an inch of olive oil in the pan to a little less than medium. Don't make it too hot or it could catch fire...

    Fry each piece of chicken. I recommend put a splatter screen or lid on the pan so the grease doesn't pop on you.

    Get a baking sheet and line it with foil. Preheat the oven to 250. Put each chicken breast on the sheet and spoon some sauce onto each one, then top each with some cheese. Put in the oven until the cheese is melted.

    Of course you probably should cook the noodles in the beginning so everything is done at the same time. The sauce you have left over is used to the coat the noodles.

    Serve it up with some garlic bread. It is really simple and really delicious.

    Also like Tatyana mentioned, crock pots are wonderful. You can buy pot roast kits at Walmart that include everything you need to make a delicious pot roast (veggies, meat, the whole nine yards). All you have to do is throw everything in the crock pot in the morning and when you get home in the evening it is all done. Don't worry, I used to only be able to cook hamburger meat lol...it took me a few times of trial and error but I got better. Now things that I used to have to measure out to make or follow a recipe I can just cook no problem. I find myself altering recipes to add flavors that I now know will work. Practice really does help, so don't give up! Smiley smile

    Tater-tot Casserole. Sounds difficult but it's super easy.

    2 lb hamburger (or)Italian Sausage ( or ) ground turkey

    -------

    1 cans Cream of Mushroom Soup

    1 can cheddar cheese soup

    1 bag of tator tots

    1 onion soup mix package

    1. cook meat on stove top in onion soup mix until in is a nice brown

    Lay tater tots lightly in pan.

    Then Mix cooked meat, 1 can mushroom soup in separate bowl.

    When finished you will lay the mixture the bottom of pan right on top of tots. You can pack it in as tight as you want.

    Next Spread cheese soup on top of mushroom soup/meat.

    Layer tater tots across to completely cover top.

    Bake at 350°F for 30 min OR until tater tots are beginning to crisp.

    When you take it out of the oven you can sprinkle some mozzarella on the top and let it melt.

    Let it cool and then serve!

    This is my favorite crockpot cookbook: http://www.notyourmotherscookbook.com/not-your-mothers-slow-cooker-cookbook/. The best thing about it is that it focuses on recipes that require minimal pre-prep. A lot of traditional crockpot cookbooks require a lot of cooking before you even put stuff in the cookbook.

    Also, search Pinterest for "crockpot freezer cooking" and you get tons of recipes people share.

    M.S.P: That is DH favorite thing to eat!!! I had never heard of it til I met him. Its pretty yummy Smiley smile He cooks it all the time!! And I think the almost the exact same way.

    Lauren: Thats good to know about the kits from walmart! Ill look into those Smiley smile

    No more dry chicken for you!!! This tastes great and is super easy to make.

    Another easy recipe--chili. I buy the McCormick spice mix for chili and follow the recipe on the back. With some rice and/or Italian bread you've got a great, hearty meal. My sister makes it with ground turkey instead of ground beef to lighten it up a bit.

    Oh..and the Hellman's chicken recipe can be made with light mayo, too!

    One more... I love using the Oven!

    Lemon Pepper Tilapia

    4 Tilapia filets

    1 tsp. Lemmon Pepper

    1 tsp. Garlic powder (not garlic salt)

    1/2 tsp. fresh ground black pepper

    1 tbsp. melted butter/or an egg

    1 tsp. olive oil

    1 cup of cornmeal

    Start by combining the dry ingredients: cornmeal, lemon Pepper, fresh ground pepper, etc. in small bowl.

    Place Tilapia filets on plate.

    Brush melted butter on each side (you can also substitute the butter for an egg).

    Cover fish in dry mixture and place on baking pan

    Cooking:

    Preheat oven 350. Cook for about 10 min or until the fish looks a little crispy. It will brown around the edges.

    Once done let it cool and then enjoy.

    I have one for the crock pot

    Chicken tacos

    3 frozen chicken breasts

    1 pkg of taco seasoning

    1 jar of salsa

    Place frozen chicken breasts in bottom of crock pot, add 1/2 the package of taco seasoning and 1/2 the jar of salsa. Stir so chicken is evenly coated. Cook on low for 6-8 hours. When chicken is done, shred in pot and mix everything together. Serve in tortilla wraps with your favorite toppings. Serves 2-3 people.
