Which entree choices??

So before going to the tasting I was thinking we will give our guests two choices: chicken marsala and steak, since most people like at least one of those. I feel like salmon or Mediterranean chicken stuffed with feta and spinach may not appeal to most people. Anyway, the chicken Marsala was not good, but the salmon was awesome. So now my FH want to include the salmon and not sure what else. I thought the steak was better than the chicken Marsala, but not sure if steak and salmon are good enough choices for picky guests. (There is a vegetarian option regardless, except we won't know what it will be till the day of). What do you guys think? What menu options are you giving your guests?

    I would go with the feta and spinach stuffed chicken. It would be easy for someone to avoid eating the stuffing and just have the chicken. I feel like Salmon and Steak is too restrictive. A lot of fish eaters don't like Salmon since it has a strong taste.

    As for me, I'll eat anything so Salmon and Steak would appeal to me, but I think you really should have a chicken option in there.

    We're offering Fig, Bleu Cheese, and Walnut Stuffed Chicken, and Breaded Pork Tenderloin Chops with Peppercorn Sauce on a buffet.

    I think whatever food choices actually were the best tasting to you are the ones that you should go with. Steak and salmon are fine... but personally I think the stuffed chicken sounds yummy!

    We're also leaning towards having steak, fish and a vegetarian option for our wedding. I was also second guessing myself about not having a chicken dish but since we get to pick our vegetarian option (it's going to be pasta primavera with pesto cream sauce) I was comfortable with that making up for our lack of chicken entree.

    I also ran it by my MOH (my sister) who is mainly a chicken eater and she said she'd probably wind up getting the steak anyway.

    If you feel those were your 2 best options go for it! Smiley smile

    Go with what tastes best. But I agree, that stuffed chicken sounds yummy! If you tried that, and it was good, that would be a contender for me haha.

    We are offering filet or salmon. 90% of our guests chose the filet.

    All you really need is beef and non beef. 75% of any given group, barring ethic or religious factors, will choose the beef.

    If you have a significant number of vegetarians, that's probably a good third.

    I feel like no one EVER chooses the chicken option... it's always known to be dry so everyone I've ever sat with chose the other options.

    You won't make everyone happy ever, so choose what you liked the best.

    I agree with Celia.

    I love chicken marsala, but oftentimes it's too salty and chicken when cooked for large number is questionable (in my book). I wouldn't mourn the loss of the chicken.

    The Mediterranean chicken sounds delish, but the cooking for a large group concerns me. Chicken can be so easily tainted and undercooked.

    Steak, salmon, and vegetarian sounds good to me.

    I say go with what tastes best and if a guest doesn't eat salmon or steak they can choose the vegetarian option or (assuming you are having a cocktail hour) fill up during the cocktail hour. More people eat chicken I believe than beef or seafood but if that option isn't the best tasting, no one will eat it anyway.

    I don't think you should worry too much about what others eat and how picky they are. The only reason we are including outside food along with the catered food from the venue is cause there are completely different cultures coming otherwise if no one eats whats available then oops I tried!

    I'd rather have the stuffed Mediterranean chicken.

    Also, PLEASE find out what your vegetarian/vegan meal will be, before the day of. If you don't take interest, they will slap some oldish pasta or eggplant parmesan (both gross, by wedding food standards) on a plate and call it good. Your vegetarian guests are sick of that, I can guarantee you.

    I think salmon and steak is perfect. We aren't giving our guests a choice. We are doing a buffet with: ham, inside round, shrimp and grits, mashed potatos, veggies, seafood paella, salad and rolls

    I also think salmon and steak is a good choice. We were originally going to do steak and chicken, but our price per person is determined by the more expensive entree. There was a $13 price difference, so I felt like we weren't getting our money's worth with the chicken. I think we're going to change to a fish dish that's only $3 less than the filet and order chicken or vegetarian options for those who contact us with dietary restrictions.

    Like Paris said, you won't make everyone happy. I'm a pretty picky eater, and I've been to weddings where I didn't eat either entree. I ate a lot at the cocktail hour and the side dishes and was perfectly happy.

    We're doing marinated grilled breast of chicken and either tilapia or salmon. During our cocktail hour we'll have a couple of beef appetizers and one of our carving stations will be a London broil station.

    I think steak and salmon are great choices but I wold make sure they offer a vegetarian plate just in case.
