Try and shop for her like you are looking for a birthday present. This will make sure it's customized to her. Then if you want to alter it to suit wedding purposes (engraving, etc.) you can.

Find something that is special between the two of you. Butterflies are special to my mom and I (after my grandfather passed away a butterfly stayed on my mom's front door for a few hours. It was huge. My grandfather loves butterflies) I got her a bracelet with two crystal butterflies and bought myself a matching one so we both have our butterflies on my wedding day.

I am doing custom handkerchiefs for my mom, dad, MIL, and FIL. You can put whatever meaningful saying you want on it. We are also going to give them thank you presents after the wedding (wine, date night giftcard, and nice printed/framed photo) instead of before; I think it will be less stressful to wait until the wedding crazy dies down

Im getting mom and FMIL pandora bracelets. I will include couples birthstone charms for each of their kids that are married, and a birthstone charm for each grandkid they have. I will also get them each a mom charm to add. Then in a little bag will be FH and I's couples charm to add.

I'm getting my mom a handkerchief with a personal note embroidered on it, and a quote from her favorite story book, and a copy of the book. The book I had never seen in person. It's an antique that was last published in like the 40s. We have always referenced it throughout my childhood so it has a ton of sentimental feeling.

It not a lot $$$ wise, but I know it will mean the world to her.

My parents gifted us the entire wedding, so finding a way to thank them seemed nearly impossible. I decided to get them a gift card to one of their favorite restaurants. It's a very upscale place so they don't get to go very often. I sent the gift-card to their house and let them know they had a gift coming. They were very excited. They do so much for my siblings and I, I am happy that they'll have a night out to relax on us.

I haven't figured it out either but I like the trip idea!
