What condiments do you like on your BBQ sandwich?

We are having BBQ catered for our outdoor wedding but it doesn't include condiments. SO what do you like on your beef brisket or pulled pork (with our without a bun?) Lay it on me please! Sauces, pickles, onions, cheese etc, whatever blows your skirt up! I want my guests to be happy and be able to...

How does a BBQ place not include condiments? Or do they, but they're extra? We did BBQ as one of our 3 meals and had the option to upgrade for extra $. If it's an option, pay for it.. Don't deal with having to worry about keeping it safe temp wise...

If it's bbq, then bbq sauce. Extra points if you offer several flavors like sweeter, spicier, smokier, tangy, etc. I might even mix them on my sandwich. I like mixing!

I know it isn't kosher for bbq, but I generally apply a lot of ketchup to everything. If there is ketchup, I will put things under it. Just a thought. I know that isn't normal for bbq but you asked...

Not grilled vegetables. I've been to one too many weddings where the entrée is a veggie tower, with a veggie side, after eating a salad.

I can generally get enough to eat, with everything else, even if I eat the roll, without the meat, and there are sides. I eat vegetarian baked beans.

Thanks for asking, by the way. 15% of my wedding guests chose the vegetarian option. A few guests took it because they don't eat red meat (the other entrée was a chicken and beef duet).

This is making me crave BBQ! I say leave the meat plain and have sauce available for people to put on as much as they'd like. I love coleslaw with pulled pork!

I have never in my life eaten cheese on BBQ but I'm a Yankee transplanted in the south so maybe I'm doing it wrong.

I never even thought to ask our BBQ caterer for condiments. The meats (and mushroom!) will be served with sauces on the side. They dont need anything else.

Our vendor doesn't do any 'special' sauces specific to their restaurant like some BBQ places do. I'm sure I could buy sauce through them but if I can get the same sauces at Costco for cheaper I reckoned I'd just go that route :-) And we're going to have a nice variety for the 'mixers' in our group (I like to mix a little into my mayo, myself - I have an unhealthy relationship with mayo lol). I'll add banana peppers to the list, I hadn't thought about that but now that you mention it, @Courtney S., my mouth is watering!
