What condiments do you like on your BBQ sandwich?

We are having BBQ catered for our outdoor wedding but it doesn't include condiments. SO what do you like on your beef brisket or pulled pork (with our without a bun?) Lay it on me please! Sauces, pickles, onions, cheese etc, whatever blows your skirt up! I want my guests to be happy and be able to...

We are having BBQ catered for our outdoor wedding but it doesn't include condiments. SO what do you like on your beef brisket or pulled pork (with our without a bun?) Lay it on me please! Sauces, pickles, onions, cheese etc, whatever blows your skirt up! I want my guests to be happy and be able to dress up their meat choices however they want. I would appreciate any input!

    I usually just like sauce and cheese. I'm simple. Maybe some onions. That sounds good.

    @PresidentSnowflake I am the EXACT same way! The sauce will definitely be separate from the meat :-) I like to dab the brisket in some mayo and call it a day lol. That's why I NEED lots of opinions, I don't want to leave anything out!

    That doesn't make sense why they wouldn't include these things. I live in TX where BBQ is huge and never heard of a place that didn't include BBQ sauces, onions, pickles and at least sandwich bread if not buns. I've also never heard of someone putting cheese on top of brisket or pulled pork. That is sacrilegious when it comes to BBQ. BBQ sauce and a bun for me please.

    I would have different BBQ sauces. I prefer a spicier sauce, while FH would have to decline spicy food. Great, now I want Rudy's!

    Wait, people put condiments on BBQ sandwiches? I've only ever eaten them with plain ol' delicious BBQ sauce and a bun. I've never noticed my family/friends eat it any other way either. Now I feel like I'm missing out.

    Lol @MrsSasswood2016, I found this out when my FMIL ordered a BBQ sandwich that came with coleslaw on top and I was like 'Whaaa? What else am I missing?' :-P

    I think if you have different BBQ sauces, coleslaw, potato Salad, beans, onions, pickles, onions and full jalapeños you'll be set. You need to include food for people that may be vegetarian.

    @bellamae, the caterer is a very small mom and pop restaurant/catering operation in my home town- it's pretty bare bones as far as catering goes. They are so well known for their FANTASTIC meat that the meat itself (and sides) are their focus. I guess they're just not what would be considered a 'full service' caterer. They don't serve or anything like that either but their food is so amazing that it will be worth it to provide the 'extras' ourselves :-)

    I love Smoked Gouda cheese on my pulled pork it's sooo good! And good smoked meats speak for themselves so any BBQ sauce should be off to the side as an option not everyone likes it

    I love sweet BBQ sauce & sharp cheddar cheese.

    I agree with the sauce on the side FH love tangy and I love sweet.

    This may sound gross but the first time I ate a pulled pork sandwich (on white bread) there was coleslaw on it. It's delicious but definitely a North Carolina thing. And as someone else said, sauce should be on the side. Mmmm - makes me want some BBQ now!
