Wedding cake...filling...mom...help... UGHHHHHHH! (Final update from wedding in comments)

Okay, so I need some help from those of you who know a little about wedding cakes. Long story short, my mom is driving me crazy with our cake. This is the only thing she is buying for the wedding which I am super grateful about, but she is very pushy and wants it her way.

About our cake (what we want): we want a 3 tiered white cake with bavarian creme filling, ivory buttercream, and the middle tier to be dusted in ivory glitter. We are ordering our cake though Publix bakery and they have an all glitter cake, but we don't want too much, just an accent.

The other day I was explaining to my mom exactly what we want since she was going to order it this week. She tells me that she thinks it should be all or none with the glitter. I respectfully disagreed and it was the end of it.

    Today, she goes to order it and calls me while I'm at work when I can't answer. My fiancé then calls me at work and MY BOSS had to get me to answer the office line (so embarrassing and irritating that this is over our cake when I was at WORK!) and tells me my mom called him telling him that the baker said we should do all or no glitter...interesting that its the exact thing she thought. Anyway, I decided to just call the bakery this weekend and go over the order when she called me tonight. She says that the baker agreed with her and also that we can't do the bavarian creme filling bc it has to be refrigerated...which I can see. But I told my mom that we have a fridge at the venue plus they are delivering it...so I don't see how an hour sitting out will be a huge deal. The creme filling problem is more believable to me, but we really want it.

    My question is: does anyone have any experience with wedding cakes with filling? What did you have, how did it work out? Do you have any advice? Should we not do the filling?

    I figured i'd ask on here because, sadly I trust your opinions/experiences more than my moms right now because to me it seems like she is just telling me these things to get her own way as far as our cake goes.

    I have no experience whatsoever with cake. But all I have to say is DO WHATEVS you wanna do. Mom may be paying but she's not the bride.

    I don't understand why the filling would be an issue if there's a fridge at the venue. But that's your call. I don't know of a cake that can't be out for an hour without something happening to it.

    I was going to go with Publix originally. I did the cake tasting..seen the glitter on the cake..its beautiful.

    Do the filling you want, it will be fine sitting out for a bit, an hour, more, etc. Do the glitter the way you want. Mom will get over it, or bring it up the next 20 years...it could go either way....

    I actually make wedding cake. Went to school for it and everything. The filling thing is bullshit because usually the cake leaves the bakery directly out of the refrigerator. Your cake will be fine for even 4-5 hours out of the fridge because, generally speaking, most venues have AC, their own fridge, or aren't dumb enough to put a cake in direct sunlight or in a warm place. When I deliver a cake earlier than the event, I actually tell them to pull it out about 2 hours before it will be served because it needs to come to room temperature, especially if you have a completely buttercream icing. I dunno about you, but I don't want to bite into cold buttercream because the butter solidifies in the fridge which makes it equivalent to biting into a brick of cold, sweet butter. Not what I want my guests to bite into. A wedding cake should be served slightly colder than room temp, but not too much colder because you want your buttercream and filling to be silky and soft. I LOVE the idea of one tier in glitter and NO bakery will tell you that you can't do something like that since it's such an easy deco element.

    Can you find any pictures with the glitter only on the middle layer? Maybe if you show your mom she'll see that you have an actual vision that will look good. As far as the filling, if a bakery is delivering, there shouldn't be a problem. It sounds like a legitimate bakery that will have a fridge. My cake had Bavarian cream. It was delivered at 5pm, cut at 8:30pm, and we still brought it home at 11:30pm and stuck it back in the fridge to be eaten later. It was fine.

    Why don't you just call the baker? It sounds like you don't trust what your mom is saying, so I'd say go straight to the source. Tell the baker your mom is confusing you about the glitter and Bavarian crème and have the baker explain it.

    That sounds annoying. I second calling the baker yourself to see what they say about it. Then again, if your mom is paying for it, then she gets some say on it too. It's her gift to you. I would try to talk to her and see if you can get her on the same page, and if not, figure out a different route. If that's going with that your mom wants or paying for it yourself.

    BTW, I love this glitter cake idea! Why didn't I think of this earlier? I wonder if I can get my cake person to glitter-fy it a bit since she works with edible glitter too. I know our cupcakes will have them.

    Let her order it and change it behind her back. Simple. I had creme filling with buttercream icing and it traveled 2 hours from the bakery to the venue, was put in the fridge and pulled our during dinner. It was delish!!

    I don't think that the creme will be an issue especially if it is being delivered and the venue has a fridge. The glitter should be up to you and FH. If you want only one tier with glitter then do only one (assuming your baker says that it is fine that way).

    I had a boston cream cake as one of my choices, and it was made with bavarian cream instead of custard filling. The dessert table and cakes were setup inside the venue by 4:00pm...and it was still in perfect form for when everyone had a slice at 9:00pm...So you will definitely be all set with using the bavarian cream.

    I also think that having one tier glitter will add contrast and be beautiful. I think a cake with all glitter is personally too much, but that is just my opinion. So if they can't do one tier with glitter then I will opt for it to all by plain buttercream

    Seeing as how Bavarian cream is made from egg yolks and cream, I can see the concern about leaving it out. It's definitely one that needs to be refrigerated, but if you were in a nice, air conditioned room, you could probably leave it out for about 30 mins or so! I'd just be concerned about it going bad if you were not in a super cool room

    The filling thing is BS. Donut shops put Bavarian cream in their donuts all the time and the cream is just fine after sitting for hours unrefrigerated.

    Thanks for the replies ladies! I am going to call the bakery tomorrow since I worked all day today and by the time I had time to talk they were closed. I really feel like the cream will be fine, but if not FH and I decided we will see if they have a sturdier filling for the bottom tier, and then just do each tier different with the top bavarian cream for ourselves. Thank you all for your help! As far as the glitter goes, I'm 99% sure my mom probably told the baker what she thought about it looking weird with only the middle tier in glitter, and probably said something like, "i think it would look weird, don't you?" and they probably felt awkward. Who knows. We'll find out tomorrow!

    Update: I called Publix today and OMG. lol Just OMG. They told me that 1 tier of glitter sounded like a beautiful idea and that they do bavarian cream all the time. Also, when I said that my mom told me someone said it wouldn't work bc it would slide, that is not true at all because they put columns inside the cake to stop that from happening. She said as long as the room is air conditioned it would be totally fine. I also found out that someone, my mom or gma said the delivery time should be 1pm?! What????? I changed it to 4pm because the ceremony doesn't even start until 6, reception at 7:30! OMG. So, basically, I changed everything to the way I wanted it and it seems like it will be fine (fingers crossed!!!).

    FINAL UPDATE: In the end I changed everything to the way we originally wanted it. It was beautiful and delicious! Everyone (including mom and g-ma) said how good it was). Apparently there was some left over that my mom took home since we couldn't travel with it and my family had it the next day and my uncle (not knowing any of the drama) said, "this is delicious! Is that bavarian cream!??". My aunt just laughed. BTW the cake was never close to sliding or falling. SMH.
