I would see if you can set up a whole new appointment with the new coordinator. I did visit one venue with a completely unenthusiastic DOC and it was a complete turnoff and I instantly knew it was not for me. If you love the venue, I would meet the new person/fill in and see how you feel about them. Also may be important depending on if this old DOC offered you anything that is not typically offered or isn’t anywhere in writing.

Most venues will go through coordinators every few months, there is high turnover. So even if you find a coordinator you like, they could very well be replaced before your wedding. it's crazy!

Coordinators change all the time so I wouldn’t stress about that. Ask for a meeting with the replacement and see how you feel before making any decisions.

I'd say it matter alot. I love my venue but the event planner there was what did it for me. She answered everything smoothly, is eager, knowledgeable, and is open to my vision. Everytime I've called she calls back as soon as she can, and is just a easy person to work with.
