I’m looking for a venue that does not have a lot of covid restrictions. Somewhere in either New York or Jersey, preferably somewhere on long island

A) NY and NJ are mostly opening up on May 19.
B) That said, any venue violating the few restrictions we have left will be violating the law, and could be shut down at any time. You would lose all your money, or potentially be liable yourself.
C) Since things are opening up, you will likely not see any COVID restrictions by next year.
