We presumed everything was included in the price per person she originally quoted us. We will deal with it but my question is do most venues do this or did we get husseled a little?

I've heard it standard. Mine is a pretty small venue with not a lot of staff. Their contract just said something to explain that gratuity is not required but always appreciated. We plan to provide a gratuity to all of our vendors. For us it's not costing us that much to add in a 15% gratuity because it's a smaller wedding.
