Depending on your budget, check out Eastern Europe. There are some GORGEOUS castles there. Poland tends to be about 1/3 the price of what you would pay here in the states. Partially due to the exchange rate and partially due to the economy.

I know you said Ireland, but if you were a friend of mine asking I'd suggest you take a look at the website of the Royal Pavilion in the UK. I personally haven't been there since 2001, but it was even more breathtaking in person that the web site- and I think the prices are very reasonable. Brighton also has some great bakeries

If you decide to get married in the UK I think in terms of license you need to get your marriage license in England and it will still be valid in the US. But that's the first thing I would advise checking out.

If you want a castle there are about a billion of them in the UK but be warned - some of them can be pretty pricey. You'd need to be a bit more specific about where. I can't help you with Italy or France, but I can certainly help out a bit for the UK.

First thing to remember - the dollar is weak as anything against the pound and euro. So your $5000 dollar budget for example will only get you about £3000 pounds. And that will not go very far at all in the UK. Our prices are high compared to the UK.

What is your budget? Where are your guesting coming from? Do you plan to rent cars or do you need to be near public transit (or easily accessible with taxis)?
