Should i be wary of this baker?

Hi everyone,

This is my situation. My mom recommended me to a baker friend that she has. My mom said her cakes are delicious and I saw pictures and admittedly they look impressive. We spoke about my wedding cake vision (single tier cake plus 100 + cupcakes to make a tower) and she was able to give me a breakdown on price and everything. My mom is paying for the cake + catering. Well. The baker sent me the contract. I don't plan on signing anything until I try her goods myself. My daughter's bday is coming up this month, and my mom encouraged me to ask her if she could bake a cake for my daughter' bday which would double up as a "tasting." The baker rejected this, saying that "it's too hot to make cakes." I found this to be very odd. Bakers should be able to adapt to all weather conditions, no?

Then, the baker suggested that she can bring 12 cupcakes for me to sample at my daughter's birthday (the flavours of the cupcakes are the ones I asked her to make for the wedding) and then I can make my decision from there. I don't mind doing the tasting, but I'm worried about her rejection to make my daughter's birthday. She is a graduate of pastry arts. She is a baker. "I can't bake a cake for your daughter's birthday because it's too hot, the buttercream can melt." Sure, buttercream can melt but wouldn't bakers know how to do temperature control and things of that nature? Am I overreacting here? Because I am now worried that she'll make some excuse for my wedding. My wedding is April 18. Where I live, April can be really warm or still somewhat cold. So what if she makes an excuse? Any thoughts? Should I tread lightly?

    Exactly, she could have definitely said something else. I'll most likely still try the cupcakes.

    Definitely weird. While I'm sure her cakes and cupcakes are delicious, I'd be more worried about getting what I want on my wedding day. If she has no problem saying No to very basic request like a Birthday cake, then who knows what she'll say No to later after you sign a contract. She may decide no cake period, and you'll get all cupcakes. Or vice versa. Or that the flavors are wrong for that time of year and substitute whatever she feels like making.

    I think I'd have to decline and go elsewhere, if you won't upset your mother by doing so. If she insists, I'd go over the contract with a fine tooth comb to make sure you're covered if you don't get what you want.

    Thank you so much for your insight. Trust me, I'm feeling the same way as well. I'm already looking for alternative bakers. I don't think my mom would be upset if I choose a different baker so long as the price is reasonable. I think she wouldn't know what to say to her friend. It's unfortunate but my wedding day is special and I want nothing to mess that up. This baker just gives me the feeling that she doesn't really care. And I can't have that on my wedding day. I don't mind trying the 12 cupcakes and still finding someone else. Thank you so muchSmiley heart

    It does seem strange, is she wanting a deposit very far in advance? J/ w what is the going cost of a 1tier cake and 100 cupcakes

    Hey Angel,

    She wants the deposit at the same time she'd be picking the signed contract up from me. She's charging us 400 for the cake and cupcakes + rental of cupcake stand. It's a great steal but she makes me worried.

    Hopefully the deposit isn't something that you guys can't afford losing if she wanted a whole amount up front I can see why that would really super make you nervous but remember cupcakes are easy cakes can be more difficult and you guys won't be eating your cake truly that's just the one you cut into

    Yeah I hear where you're coming from. I'm totally open to sampling the cake since I'm not paying for the "tasting" but at this point I'm not confident in going forward with her. And further more whenever I contact her, it's like she ignores me and contacts my mom... really strange to me. I mean I understand my mom is the link between her and myself, but it's my wedding day and vision, my mom can't always speak for me.

    This seems very odd to me. My sister is a pastry chef and has catered to different events inside and outside at the request of the client. “Too hot” isn’t a valid reason not to accommodate the client. I would be wary of this baker.

    That is definitely a bit odd saying "it's too hot". Is it possible to investigate her store or talk to other employees?

    I'm a pastry arts graduate as well and that's complete BS! I have a very simple buttercream recipe that I learned at school and it holds up fine in the heat as long as it's stored probably before hand!

    Yeah, it's really odd. So true, the temp being too hot isn't a valid reason. So it's really strange.

    Wow, that's impressive. Congrats on your pastry arts education. So cool! And I know, this baker's statements are really troubling. It literally makes no sense. I'll definitely keep looking around.

    That ridiculous! People make cakes with buttercream all the time in the summer. I did tastings with bakers in the summer in the middle of a heatwave and they were fine. They weren’t the best because they weren’t fresh. And the one we went with was amazing and it was still doing that heatwave and they looked perfect and taste amazing. That doesn't make any sense.

    ***UPDATE*** So yesterday night, I bucked up and messaged the baker to confirm if she would be coming to drop the cupcakes off at my daughter's bday party for the tasting, and this morning she straight up said I should find another baker. She said she doesn't want to bake my wedding cake for me and I should find someone "closer to me." Not quite sure what that's supposed to mean. She lives like 30 minutes away. I'm not sure if she means by association or location. Well, she made the job easier for me. I can't trust her. I knew I couldn't when she rejected making my daughter's cake. Some friend my mom has. Clearly she wasn't interested but it's not too late. I was looking forward to checking the cake off my list of things but it's right back on again. Bummer. Well, I just wanted to give you an update!

    I personally would not consider this baker any further. It is an odd thing for her to say and makes me very suspicious of her follow through on your big day.
