Saving cake for 1st anniversary? Sounds like food poisoning waiting to happen...

Is anyone else actually doing this? I had heard of this tradition years ago and have always been put off by it. Is there anyone who has done this before? Was it awful? FH and I were talking about it tonight and decided against it but I'd like to hear other opinions.

    Yeah tradition or not, neither of us can stand the thought of it. Especially when we have fresh strawberries in ours. I can't imagine them being "fresh" a year later.

    Right? It just sounds like it would be a freezer-burned hot mess (cold mess?) after a year. No thanks! Maybe I'll figure out the recipe and make the same flavor cake for us for the anniversary.

    The tradition started in the UK, where the traditional wedding cake is a fruit cake. And I can say from experience that it actually works with fruit cake, especially if the fruit cake is soaked in lots of booze before it is frozen. (The top layer of our cake was the traditional British fruit cake, and it was delicious on our first anniversary.) The reports I've heard on freezing sponge cake are mixed at best.

    I was told that the cakes are just as good after being froze for a year. Problem with that is, I have an addiction to cake. It's not happening. Matter of fact, I plan to take mines with us on our honeymoon.

    We don't plan to. Our best friends just had their 1yr ann. and they decided to keep the cake. Well they said it was AWFUL and they couldn't even finish 1 bite of it. Our baker told us that they have you call a month before your 1yr and they make a special top cake for you that was exactly the same as your wedding cake so your not eating old cake!!

    I am definately thinking of doing this, the top, smallest layer will be fruit cake soaked in alcohol for ages!!

    If the cake is frozen properly there's no reason for food poisoning. Although some cakes freeze better than others, most can be frozen and be great defrosted. We frequently do that when we have parties and leftovers. Never had any issues.

    Ive heard of this. Im using all my cake at the wedding. In my area a lot of bakeries are making a small duplicate cake as a gift for the anniversary.

    We did it with regular cake (and buttercream frosting), and it tasted fine, if perhaps slightly stale. Mostly it was funny to be eating year old cake on purpose Smiley smile

    We are not doing this. Our baker is going to provide us with a top tier of our wedding cake for our one year anniversary in the price we are paying her. So we get to have our cake but it will be fresh and not freezer burnt.

    We didn't have any left to save. People like it so much they ate almost all of it which was fine with us. We will get a little one on our anniversary.

    We are doing this, because I love the tradition of it, however its part of our wedding cake purchase that our baker will make us a complimentary cake on our 1 yr (just the top of course, but identical). As for food poisoning, not likely unless its not handled properly, but taking reasonable steps to freeze it (your baker should help you with this if you need it) should be fine. This tradition has been for a very very long time and I've never heard "we got food poisoning from eating our wedding cake that we had in the freezer". Its a personal choice to do so, or not,depends on how traditional and what your thoughts are on eating something thats been frozen. This post is interesting to me, I'd have never thought anyone wouldn't do this. There even was a tradition about sleeping with a slice under your pillow (I think it was for single ladies, I really dont remember much about that one!)

    This is not really an issue - as the frosting seals the cake in so there is no freezer burn. As far as fresh fruit - it is frozen all the time without issue.

    Before wrapping for the year - put in freezer overnite with nothing so the frosting will firm up. Wrap in plastic, then foil, then plastic again or put into one of those giant ziplock.

    My sister had her's boxed and wrapped and they didn't have any complaints about taste. The vendor that made her cake gave her instructions on what to do with it but I didn't notice anything special other than wrapping it well and and thawing it.

    Its all about what y'all are comfortable with and would enjoy though!

    We were thinking about it but when we have our meeting with the bakery making ours they said they suggest eating it within a couple weeks and then if we call a week before our anniversary they bake us a free new "topper" Smiley laugh so excited for that!
