Religious Officiant Needed

That isn’t going to happen. Only a catholic priest or deacon can do a catholic ceremony and most dioceses won’t approve them to do it outside a sanctuary due to the solemnity of the sacrament.

To be honest, you might find it difficult finding a Catholic priest that is willing to perform a ceremony outside of a church. Have you consulted your local priest about this?

Look for an old Catholic priest. That's who we are using. He will do a Catholic ceremony outside the church. Unfortunately the Catholic Church does not recognize it as a true Catholic wedding. But that will be the closest thing you can get to an actual Catholic ceremony.
