questions on wedding cakes - bavarian filling & buttercream frosting

MJ, on October 24, 2016 at 1:08 PM Posted in Planning 0 4

Anyone have a bavarian cake for their wedding? I ask because I really want bavarian cream filling with strawberries on all 3 tiers. I went to 3 bakeries and one of them said they could only do the top 2 tiers in bavarian, the bottom tier would have to be something else. They were concerned about the cake being too heavy or something. The other 2 bakeries didn't mention anything.

I started googling and found that with bavarian the cake can get wobbly? So now im scared that the cake is gonna slant, tilt, fall, IDK. What if it gets messed up getting to venue.

Also - I want a buttercream frosting outside the cake instead of fondant. I am concerned about it starting too look shiny if its too warm in the room or it starting to melt.

So now my head is filled with concerns about cake filling as well as cake frosting.

I love bavarian cream. Lots of people do a different flavor/filling for every tier if that is something you're interested in.

MJ - where are you located? Is your venue outside? What is the weather typically in your area in late April?

Not so fun story - FH DJ-ed a wedding in early September. The venue was a barn loft with no AC, it was hot and stuffy. The cake had beautiful pink buttercream roses on it. The baker finished setting up the cake at 1 for a 5pm reception. at 4 pm - The icing melted and sloughed off the side of the cake, the baker came back and fixed it and added more icing all around the cake to blend where it had come off. AS the couple made their grand entrance, the cake fell over AGAIN. Moral of the story - Plan for all weather and have a venue that can accommodate.

Thankfully our venue is climate controlled and stays at a temp to keep both the cake and flowers fresh

There are lots of factors to consider, but I'd trust what your baker says - They're the pro

ETA- I am also a fan of different flavors/fillings for tiers!

@Chip Yikes! That is what I'm affraid of :/

I am located in the DC area. Temperatures here are very unpredictable. Could be a very hot day or could be a very cold day. Hoping for something in between. We never know.

My wedding will be indoors. It will be climate controlled - I'm just scared that with all the people there it might make it warmer.

But this is something I am going to ask the other 2 bakers to see what they say as well.

@MJ if it is climate controlled, the thermostat will (hopefully!) adjust to the body heat. But I don't think body heat will increase the room temp enough to bother the cake. The wedding I was talking about, the temp was in the upper 80s with no air, and the cake had been sitting in that heat for hours
