Open Bar - Limited Open Bar?

If you wanted to serve beer, wine, and a couple choice liquors, what would you choose? We've received a reasonable quote from a company and my fiance wants to lower the cost a little by not offering as much of the liquor and wine options. Original quote includes: Bud Light keg, Oberon keg, Merlot, Chardonnay, Moscato, Seagram's whiskey, Maker's Mark whiskey, Smirnoff Vodka, Bacardi Rum, Captain Morgan Rum, Jose Cuervo tequila, and a bunch of mixers and garnishes. It is based on consumption so whatever is not opened we do not pay for, but what makes sense?

    I think having beer, a red and white wine, and a dark and light liquor is fine! I’m not a fan of moscato but that could be because I live in wine country and have been spoiled by good wine haha. For liquor it’s a know your crowd thing but I think a whiskey and vodka would satisfy most people.

    I agree that cutting the Moscato (unless it's what you plan to drink all night) is the first cut I'd make. And then I agree that a dark and light liquor would be good, though I might choose a spiced rum and vodka (that's based on my friend group though, not my own personal choices). Another option is to only offer a few signature cocktails, which would limit your liquor choices and also help your bartender simplify things.

    I would ditch the moscato, unless there’s a special reason for it. I would lose one of the whiskeys and offer a gin instead. But it really
    depends on your crowd. Also I’d think about how much your group is going to drink, you could be better off with a per person cost. Consumption would make me nervous, you never know how much people are going to drink, people leave their drinks and just get another one, or don’t like it and order something else, ask for a heavier pour...all kinds of things can run up a full open bar pretty quickly. You don’t want to be watching how everyone is drinking all night. Consumption makes more sense for beer and wine only or if you are sure you have a light drinking crowd

    I would definitely limit your liquor options. Typically some drinks have multiple types of liquors or mixers in them, and the expense adds up very quickly. If you just really want liquor, then maybe just have a few signature drinks. We are only offering beer and wine for our wedding- 2 types of beer and 1 type of wine. I adopted the mindset that if those options were not good enough then the tea, water, and coffee are available lol

    I would ditch the tequila, runs, and one of the whiskey options. Have a whiskey and a vodka option. That plus beer and wine and you should be set! I don’t personally like moscato but a lot of inexperienced wine drinkers do, so it is probably a good idea to keep it around.

    I don't think you need two kinds of rum, so that could be skipped. The rest seems pretty normal, only two kinds of beer seems light to me actually.

    Beer and wine are fine! Merlot and Chardonnay along with the beer options would be plenty. But if you'd like to offer one cocktail maybe one of the rums to do rum & coke, or cocktails? I'd say or a vodka but Smirnoff is pretty yucky so I'd stick with one of the rums.

    Two kegs seems like a lot of beer.

    I would stick with one keg of beer and maybe some bottles for other choices, Makers & a vodka. I would ditch the Rum & Tequila

    As for the wine I personally would pick a Cab and ABC (Anything But Chardonnay). My family is more a full body wine group and rarely are white wine drinkers.

    Lose the Moscato. Choose 1 rum and 1 whiskey. Keep the tequila.

    You have a red, a dry white and a sweet white, to me that sounds good.

    You have 2 rums and 2 whiskeys could you only have only one of each?

    2 beers, merlot and chardonnay, 2 liquors: vodka (get a better brand if possible) and Maker's, spicer rum, rum or tequila (based on drinking preferences of your crowd. I'd suggest doing two specialty cocktails - one with vodka, one with your other alcohol, that match the season. But let folks do other mixed drinks with those liquors as well. No need to keep the Moscato as sweet wine drinkers will likely be fine with a sweet mixed drink as well.
