I need some opinions on what else to add to our menu.

FH and I decided a while back to have quesadillas on the menu for dinner. We are needing input from a larger crowd to help us on deciding our sides! We will have to hire a second caterer (venue said it will be fine) because the restaurant catering the quesadilla's serves ONLY quesadillas. (If you live in Fresno, Ca or Visalia, Ca I HIGHLY recommend you check out Quesadilla Gorilla!)

Should I find a place to cater rice and beans? How about salad? Chips & Salsa?

We are also thinking of having a salsa bar..Yay or Nay?

We haven't even begun to think about snacks for cocktail hour so any input on that would be appreciated.

I've attached a photo, from the caterers website, so people don't think i'm serving just a simple cheese quesadilla. Lol

Salsa bar sounds AMAZING! And to whoever said salsa is just salsa, um no, there are SO many kinds of salsa!! FH is Hispanic and loves when I make homemade salsa. bean and rice would be a good add, how about tacos, like fish or chicken? I think another "main" option would be a good idea.

I think a salsa bar would be a great idea to go with the menu. Maybe burritos? Maybe do salsa as a favor? Just be careful if your wedding doesn't have a Mexican theme. But I LOVE Mexican food.

Goodness. Elote, empanadas, taquitos, include pico in your salsa bar, and queso.
For an added dessert, throw some flan in there!!! Can you tell I'm Hispanic and hungry haha?

@OP my dad uses them to cater his school's functions. They're very good! I'm just interested to see how it goes with 100 hungry guests!

As a New Mexican, if I tried to serve my friends and family a quesadilla as dinner they'd throw them at me. They'd expect quesadillas as an appetizer or late night snack. I'd do enchiladas or fajitas with rice and beans with fresh flour tortillas on the side. That's a dinner. Real Mexicans don't eat a quesadilla for dinner lol

Oh, sucks that you have a rude family. Thank God my family and my in laws (who are 100% "real Mexican") wouldn't do that. This isn't just any simple cheese quesadilla. The caterer offers different meat and filling choices. I was simply asking for suggestions on sides to serve with the quesadillas not if I was being authentic or "real Mexican" enough.
