Mexican Food on the Menu

Hello all!

I need some opinions on what else to add to our menu.

FH and I decided a while back to have quesadillas on the menu for dinner. We are needing input from a larger crowd to help us on deciding our sides! We will have to hire a second caterer (venue said it will be fine) because the restaurant catering the quesadilla's serves ONLY quesadillas. (If you live in Fresno, Ca or Visalia, Ca I HIGHLY recommend you check out Quesadilla Gorilla!)

Should I find a place to cater rice and beans? How about salad? Chips & Salsa?

We are also thinking of having a salsa bar..Yay or Nay?

We haven't even begun to think about snacks for cocktail hour so any input on that would be appreciated.

I've attached a photo, from the caterers website, so people don't think i'm serving just a simple cheese quesadilla. Lol

    Rice and beans for sure. Salsa bar would be great, as would fresh guacamole. Maybe you could do some stuffed jalapeños for appetizers

    I love quesadilla's and love the idea of having them at a wedding, but I would do them either during cocktail hour or as a late night snack. That way you can have a full menu for dinner that is a little more varied.

    I say hellz yaass to the salsa bar! To stick with a Mexican food theme, I think rice, beans, salsa, GUAC!!!, tortilla chips, and maybe some little taquitos. Also, are the quesadillas made to order/customizable by guests? ETA: and queso...how the fuck did I forget the queso?! Yummm...

    Eh salsa is salsa - definitely have it but I don't know about a whole bar, I think your $ would be better elsewhere, like guacamole, bean dip, etc

    I don't have much to add, but I LOVE (not sure if there is a proper name) Mexican rice with the vegetables. I could eat an entire bowl of just that rice.

    We're having a "Mexican bar" for our cocktail hour. Chips, salsas, guac, and everything in between. Also serving margaritasSmiley smile

    OMG @WWLaura is sooo right about the street corn! One of my absolute faves. Little messy, but so are queso, guacamole, salsa, etc. so I say go for it!

    Can you give the option to people on a gluten free or low carb diet to get all the quesadilla fillings either solo or on a salad?? Love this menu. Margaritas are a signature drink must! Tamales would also be good...love all the sides mentioned above. We did micro tacos as a passed app and they were a huge hit!
