Mexican Food on the Menu

I need some opinions on what else to add to our menu.

FH and I decided a while back to have quesadillas on the menu for dinner. We are needing input from a larger crowd to help us on deciding our sides! We will have to hire a second caterer (venue said it will be fine) because the restaurant catering the quesadilla's serves ONLY quesadillas. (If you live in Fresno, Ca or Visalia, Ca I HIGHLY recommend you check out Quesadilla Gorilla!)

Should I find a place to cater rice and beans? How about salad? Chips & Salsa?

We are also thinking of having a salsa bar..Yay or Nay?

We haven't even begun to think about snacks for cocktail hour so any input on that would be appreciated.

I've attached a photo, from the caterers website, so people don't think i'm serving just a simple cheese quesadilla. Lol

    Sounds awesome! I second the idea of having salad for those who are gluten-free or on a low carb diet. I also 4th the Mexican corn idea.

    Salsa and guac bar would be fun! Along with chips and queso and refried beans! You're a bit light on veggies--there might be some in the quesidilla, but I'd recommend a side of grilled mixed peppers and onions or salad. Would it also be possible to serve ceviche as well? Thinking of some lighter fare since you typically don't see seafood in a quesidilla. Overall, sounds like a fun menu!

    We are doing Mexican. We have tropical salsa chips and fruit for apps, rice and beans for sides, southwestern salads, and we're doing tacos so have 2 meats hard and soft shells plus all the fixings. It's all being catered.

    I was also going to suggest elote (street corn). I make it off the cob so it's a great, much neater, side dish.

    That queso fountain, though. OMFG!!!

    What about a taco bar! That might be a little bit more fun than just a salsa bar but if you don't want to do taco bar then I like the salsa bar idea too

    I just want it all now. I am for real thinking "how can i hire a local elote man?" SUCH A GREAT IDEA. I love the queso fountain!

    Mini burritos! Taquitos! Flautas! Rice and Beans! Chile rellenos! Enchiladas!

    And for dessert? Flan, an assortment of empanadas and pan de dulce!

    Ditto what others have said minus the queso because frankly the southwest has questions down and CA does not (speaking as a CA native) .... If you haven't decided on a dessert I bet salted caramel cupcakes or something like that would be awesome

    Also from Fresno! We're having a Mexican restaurant from Reedley come out with a truck to cater for our wedding. They do burritos, tacos, quesadillas with 3 meat choices, and it includes beans, rice, chips and salsa it starts at $7 a person.

    I agree with @Kay. You definitely need rice and beans. I would be all over that salsa bar and definitely guacamole.

    I also think you should throw in some kind of green as well.

    We did Mexican and everyone raved!

    Flour and corn tortillas, lettuce and chips as a base. People could make tacos, taco salads or nachos.

    Meats were grilled shrimp, carnitas and chicken. Sides were black beans, refried beans, rice, corn salsa, fajita veggies, grilled veggies, guac, sour cream, cheese, pico, salsa, just everything you could possibly want.

    It was great too because we had an assortment of vegan/pescetarian/gluten free guests and everyone had something that worked for them!

    All of this sounds amazing.

    I would definitely want rice and beans, as well as condiments for the quesadillas (sour cream, pico, guacamole)

    maybe some kind of southwest salad or fajita veggies too? I would love a Mexican theme!

    Omg Mexican sounds good! Going to have to get some guac & salsa tonight haha

    I think the sides others have suggested are a good idea. I say just be aware of the spice of things. I love spicy so everything I make when it comes to Mexican food is spicy lol but I forget it's not the same for others.

    OP those quesadillas look delicious!!

    Omg. I'm from AZ, so I'm all about this. We're doing something similar for our RD because half the WP is from the east coast and we want them to experience authentic Mexican food.

    I'd definitely do sides of rice and beans (and give people options if you can--think white vs brown rice, black beans vs pinto), and a chips and salsa bar sounds awesome! I love places that have a variety of salsas to choose from. Maybe some people only want pico de gallo, while others (like my FH's BM) looooove the super spicy habanero stuff. You should also add guac and sour cream if you do something like that. Maybe even go all out and do a nacho bar! It's a little on the messier side, but I'd definitely be all about it.

    I'd also offer some kind of salad. What are you planning for drinks? Maybe look into getting a margarita machine!

    I'd add a meat in there somewhere in there. I can't have dairy at all, and I need heavy protein. Rice and beans wouldn't work to keep me full all night, especially if I'm drinking. Sounds good though!
