How many extra seats to have at the reception?

Are you assigning tables or seats? If you are you don’t need extra. If you aren’t I would highly recommend it because otherwise you would need a lot more extra seats than that.

Why would you need an extra table? I would have just enough for 380. No one should randomly show up if they havnt rsvp’d, that’s rude on their end, not on yours for not having a table for them.

I can’t imagine why you would. An extra empty table
would look very odd, in my opinion.
