Should you have a host couple? What do they all do? Was it helpful?

That depends. Does your venue provide someone as part of the fee who fills this role? Some do, some don't. If not, it's not a bad idea to have a couple at the door welcoming people and telling them where the guest book is, the bar, the escort card table, etc.

Is that like having ushers at the door to greet guests?

We're having a host and hostess. They'll be doing what @Going said in addition to introducing the bridal party at the reception.

Totally not necessary, but FH and I really wanted to include these friends in some way.

Are you referring to hiring professionals to act as a host and hostess, or asking a friend to act as a host/hostess?

In that case, hire a DOC.

Ok so a day of coordinator. Yeah, don't assign this job to family/friends. It's less of an honor and more of an inconvenience for them.
