Future Mrs G., on February 22, 2011 at 12:45 PM Posted in Planning 0 6

Has anyone had these in their cakes? these are the two things they bakery said they would put in our cake if we want to make them have a filling like texture.

I have never tried them... what do you think??

I'm the worst person to ask, I love them both! It depends on my mood. I have the worlds biggest bakery-tooth. Did you do a tasting? If not, ask them to make sure to give you samples of both in a few flavors so you can try them.

I am with @Cyndi. The best thing would be to taste them yourself. Plus it is a great excuse to eat cake!

We havent done a tasting.. this is what they told us.. come in.. we do cupcakes every day of different flavors..

well-- to my knowledge cupcakes do not have ganache or mousse in them!

the other issue is... this is our venue who has to do the cake- we have no other option..... so its sooooooo hard to work with them.. i want to cry!

A Mousse is creamier and lighter

a Ganache is just hot cream and Chocolate..so it is very rich (depending on the quality of Chocolate.

so depending on what kind of texture and flavor you are going for...my preference would be the Ganache...

I would choose the moose, it would be lighter and fluffier between the layers than a thick ganache. The flvor also may not be as intense and more people may be able to enjoy it.

They may ice the cupcakes with the ganache and that would be a good way to try it. They may also take the very center out of the cupcake and fill it with moose before icing it. Ask more detail about the cupcakes, they might actually be a fairly good reflection of the cake.

@Future Mrs. G: If your venue is MAKING you use this baker, MAKE THEM set up a tasting for you. Tell them you're paying for something, so you'd like fitting service.

My venue included my cake, but they made sure to have a tasting set up for me.

Have you chosen what flavor cake you'll have? If not, you'll have to try both the cake and the mousse and ganache together to decide what filling. Some cakes go better with ganache, some better with mousse. Also, the texture of the layers will make a HUGE difference with which kind of filling you choose.

So, my advice is: set up a tasting. Let them know which cakes you'd like to try from the flavors they offer, and that you'd like to taste them with both mousse and ganache.

FYI: they may charge for the tasting. Mine was $15 and so worth it. What I had "thought I liked together" didn't go AT ALL. So, in the greater scheme of the wedding, spending 15-30 bucks on a tasting for a cake that will cost probably 500-800 bucks... totally worth it.
