Food for an August Wedding

My FH and I are getting married in August of 2020. I have a pretty good idea of what I want for desserts, attire, decor, but I have no idea what to do for food! Our venue is an old boys camp on a lake in a small town in Vermont and in August it can get pretty hot! Dinner will be around 6:00, and we will have a dessert table with a smore's bar for around the campfire. We will provide sodas and what not, but it will be BYOB as far as alcohol so cocktail hour will be a bunch of outdoor games with appetizers. We're a very laid back couple and would be content with burgers and dogs, but for my wedding I want something a little more elegant than that. My family and I are going to do what we can ahead of time and on our own, like potato salads, fruit, mac and cheese, etc. What are some recommendations for appetizers and dinner you all have?

We also have a few members of our family that are vegan/vegetarian so any ideas for them would be much appreciated also!

    We're keeping our appetizers simple and just doing meat, cheese & crackers, fruits and veggies, tortilla chips and dips, etc.

    August too! We’re having a grill/bbq. With pork sliders, snake sausage bites, artichoke dip and bacon dates for apps and buffet of steak and fish, “warm pasta” potato salad, grilled veggies, blue cheese slaw, salad, breads and grilled peaches with gelato bar plus our cakes and whoopie pies.

    My mom is planning to smoke a couple briskets since we are looking at using a group campground. I don’t have any suggestions for vegetarian or vegan- sorry!

    We are working on our menu. For appetizers we’re doing a chips and salsa bar. FH is Guatemalan so we will have what appeals to both of our families.

    Something along the lines of this with different chips and salsas. We will also be adding plantain chips and pork rinds and flour chicharrones.

    We will do a number of dips and salsas. Pico de gallo, red salsa, green salsa, guacamole, bean dip, cheese dip. Also thinking of other small bite items like avocado and bacon egg rolls, mini empanadas etc.


    For vegetarians you could do an avocado egg roll, black bean empanadas, lentil and sweet potato tacos, potato and onion taquitos.

    All of our food will be Mexican/Guatemalan with some adaptations for our vegetarian family members.

    If you go the Mexican food route, you could always make jackfruit. It's supposed to be a good meat substitute (I've never tried it though.)
