Fajitas as wedding food?

I am half Hispanic and my FH is half Italian so we kind of wanted our cultures reflected in the food choices. So we have an Italian station w gnocchi and another kind of pasta, and we have a Mexican station w fajitas.
I’ve been okay w it but a part of me wonders if the fajitas is a bad idea. But I don’t really know what else to do. Maybe scrap the fajitas and just amplify the Italian thing with some other options?? Btw there’s also a “Noshings” station that will have small-sized comfort foods later in the night like sliders, BBQ nachos (we’re in Memphis), chicken and waffles.

    I think it sounds great! Just make sure there are extra napkins about for people. This is a refreshing break from the normal chicken and salmon!

    I've been to multiple weddings where they served fajitas and I thought it was awesome! and delicious too!

    I wouldn't do fajitas at a wedding because they tend to be messy (even though they are delicious). Our friends did tacos at their wedding and it was really tricky to prevent the grease from dripping down your hands. Personally for a wedding, I'd stick with food you eat with utensils, rather than anything you eat with your hands. It's just not fun to have sticky, greasy hands when you are in nice clothes.

    If you do stick with fajitas, I'd have wet-naps available for guests (like they do at bbq/rib places) and lots of them. Extra napkins won't cut it. Also, I'd do it only if you have a "real bathroom" and running water at your venue. I've been to venues that rely on portable toilets and even the really nice ones are sufficient for thoroughly cleaning grease off your hands.

    My family is from New Mexico and Mexican food is a staple for us. We are having fajitas as an option. We live in Austin, TX right now where Mexican food is also a big deal. Many of the caterers around here have fajitas as a top choice for weddings. If you love it and it represents you then I would keep it. It will be delicious!
