Entree ideas for a spring wedding

Hi everyone!

My wedding is March 28, 2015 (yay!). My fiancé and I are going to be trying some entrees but all I see is the typical chicken breast, rice and mixed veggies. I was wondering what are some unique spring entrees ideas out there!?!

    We had roast beef w/ mushrooms, Mediterranean chicken with veggies, and then salmon with a lemon-butter sauce. That was for a May wedding (guess that still counts as "spring.")

    I havent even created my own menu but i love tenderloin! i would never pass up pork tenderloin lol

    My caterer had options of spinach ravioli with garlic bread. Not sure if its suitable for spring, but it taste great and has not to heavy

    Our venue works with two caterers. The package price is based on the catering menu you select. Luckily the catere we wanted was the cheaper package anyway! She is from Louisiana and has some really good cajun selections. Here are some of her choices:

    Cajun Chicken

    Chardonnay Basil chicken

    Chicken Parmesan

    Pecan Crusted Chicken

    Crawfish Etoufee

    Beef Filet

    Blackened Salmon

    Tilapia w/Cajun Cream Sauce

    London Broil

    Bourbon Pork Chops

    Stuffed Pork Chops

    Portabella Stack

    Eggplant Parmesan

    Ricotta and Spinach Ravioli

    The other caterer had these options:

    Blackened Tilapia

    Chicken Piccata

    Beef Bourguignon

    Blackened Salmon

    Chicken Marsala

    Pistachio Crusted Chicken

    Lemon Pepper Pork Tenderloins

    Traditional Meat Lasagna

    Filet Mignon

    Pan seared Sea Scallops

    Miso Glazed Colorado Rack of Lamb

    Red Wine Braised Short Ribs

    Gulf Coast Shrimp and Grits

    Cornish Game Hen

    New York Strip Merlot Braised Lamb Shank

    We went with a Greek salad even though it was a bit more but it was just soooo good and freshening! Then stuffed chicken, mashed potatoes, and I haven't picked out the other side item yet.
