You could do an FAQ section on your website (if you have one) that says there will be non-alcoholic drink options available.

I wouldn't say anything about what's not being provided on the invitations. You could let it be known through word of mouth or on a wedding website.

I would highly suggest reading through some of the older threads on WW. Most popular filter feature will show you many, many threads (with hundreds of comments) about dry weddings. Respectful of you to let them know ahead of time, though.
