NWR Spinoff: Healthy Lunch Ideas for work?

I do good with breakfast and dinner, but lunch is getting REALLY boring here at work. I end up packing something stupid (a can of soup) and then complaining and going out and eating something awful. What do you ladies eat for lunch when you have to pack it for work? or am I the only one that carries a lunch box still?

    I started copying the idea of the protien boxes from Starbucks...

    I use those silicon cupcake liners - put some tomatoes, marinated mozzerella, a bit of fruit, chunk of cheddar cheese and usually some chicken or turkey.

    I eat the same thing for a week then I switch what I bring.

    Since it's high in protein I don't snack nearly as much & I was able to get my skinny jeans on today - although not comfortably - it is progress

    I usually bring a turkey sandwich, a snack like pretzels, and a piece of fruit. If its an extra hungry day I bring a greek yogurt for a 3pm snack. I know it is tough for lunch. I get sick of bringing the same thing. If I go out I try to stick to only healthy options. it still feels like a treat because its something I do not normally bring!

    My go to lunch is yogurt, a banana, and an apple with a very small amount of peanut butter. My afternoon snack is a 1/4 c pistachios with some dried cranberries. Low fat string cheese is also thrown in there as well.

    We both pack every day, i usually make something on sundays as a main dish to last all week and bring sides. This week is taco salad. I bring the ground beef, lettuce, sour cream, corn all separate in containers. Sides can be fruit, veggie and hummus, boiled eggs, cheese stick, etc

    i like making casseroles for lunches too

    I'm a Lean Cuisine freak! lol Oh and I use my daughters old Spongebob lunch kit....(yea I said it) lol

    I pack our lunches for the next day each night. It's a huge time saver, and most of the time, it's easy to just package everything up (i.e., cut fruit) for the work week, rather than dishing it out each night. Here's this week's lunches, if you're looking for inspiration:

    Mon: Taco Salad (taco "meat"(vegetarian) over mixed greens with hot sauce, diced cucumbers, shredded carrots, fresh cilantro, lime juice, hot sauce

    Tues: grilled chicken (s/p/garlic), fresh green beans

    Weds: grilled chicken over romaine with black beans, grilled peppers/onions, green chili salsa

    Thurs: Portabello bake (marinated portabellos, spinach, mushrooms, broccoli, veggie crumbles, cheese - kind of like a baked ziti-type dish)

    Fri: chicken stirfry (asparagus/edamame/carrots/mushrooms) over pureed cauliflower.

    I usually just take leftovers. DH gets a sandwich for school (he is there all day), that way he can eat it whenever he gets a chance to.

    Both of the lunches contain the main meal-leftovers or a sandwich, juice box, granola bar (for morning snack) and either fruit, some veggies or a yogurt (for me).

    Yes, both of us have lunch bags. DH's is a grey one that is insulated. Mine is black with the letter T on it, also insulated.

    I work from home but I help FH w/his lunch and Use to bring mine. Things we bring are:

    Soup/Salad

    Lean Pockets

    Frozen cooked chicken and a bag of steamer veggies

    Wraps (of different veggies and meats depends on my mood)

    Left overs

    Normally I also took nuts, fruit, yogurt stuff like that for snacks.

    I meal prep on Sunday.. I usually make big salads with chicken or ground turkey. I love making pulled pork or salsa chicken in the crockpot and pairing that with a veggie.

    I usually eat peanut butter on high fiber wheat for lunch. It's protein, and a little bit of carbs. I have some side with it - fruit, snackwells, pudding. Basically whatever I feel like having.

    I just struggle with the fact that we have the our athletes' training table downstairs...so no matter what I bring, it's usually not as good as what's down there. But it's expensive to do that every day (DH eats there for free since he coaches, but since I'm in administration it's $5/day) and I always go way over what I would have at my desk.

    I'm contemplating buying a pass to the campus rec center to do yoga over lunch every day, but that seems unnecessary since I teach at a different gym (that's too far away to get to over lunch). But I've put on five pounds since getting married and even though that includes honeymoon time and taking care of my mono-ridden husband (thus not having as much time to work out) THIS IS NOT OK.

    I pretty much eat some variation of a big ass salad everyday. It always includes tomato, cucumber, avacado, and some protein. Whatever else gets thrown in there (nuts, seeds, other veggies, etc) depends on what I have laying around. I don't use dressing (mostly because almost ALL of them have soy in them) - I just mix salt, pepper, and minced garlic which olive oil and go to town.

    I'm a creature of habit and don't want to think in the morning - so having a go to works for me.
