Dinner Sides

Sabrina, on March 18, 2012 at 2:59 PM Posted in Planning 0 14

Other than the main meats.... what sides are you having? We're doing a Mashed Potato Bar with all the toppings.. but what else?

Our meats are Beef Sirloin, sliced for French Dips, hot Ham & hot Turkey slices as well. SO basically heavy sandwiches for dinner, the mashed bar and WHAT!?!?!

Asparagus, green beans, mashed/roasted potatoes, mac & cheese (a staple in my family) rice, steamed broccoli and corn (whole & cream)

We are having a mashed potato bar as well. I'm so excited for it since it tasted so good at our tasting.

We are having a buffet style dinner (or rather lunch). Our meat choices will be italian stuffed chicken (mozzarella and prosciutto and butter cream sauce) and a beef tenderloin carving station so people can choose their beef to their desired temperate (want more done = cut off the end. want more rare = cut off the middle).

Our sides will be the mashed potato bar, a "seasonal vegetable medley" (so basically a bunch of vegies lightly cooked) and we also decided to add a pasta option. I forget the exact kind that we added to our menu though.

Oh and there will be a choice of 2 different salads as well.

I would go with a steamed veggie myself. I personally love asparagus

    For sides we have:

    Mashed potatoes with gravy

    Spaetzle

    Grilled vegetables

    Cold cucumber salad

I think it's good to have at least one starch (your mashed potato bar which sounds OMG fabulous), and at least one green non-starchy vegetable like asparagus or green beans or something.

Our main courses are pasta, one with cream alfredo, one with meat marinara.

Our sides are bread sticks, Cesar salad, fresh fruit, and we haven't decided if we want fresh or grilled veggies.

Yeah I would definitely go with some sort of veggie, steamed/grilled or fresh, like a salad or something. Personally I would prefer a salad, since the sandwiches and potatoes will be warm, a cold veggie would complement that well.

We're having a taco buffet, so chips/salsa will be the side. Yummmmmmmmmm.

We are doing a salad with both choices. The chicken Parmesan is served with pasta and the sliced sirloin is served with mixed seasoned veggies and baked redskin potatoes. Potato bars work out amazing. My fsil just did one.

We are doing "action" stations, so they can get chinese - sushi, fried rice, duck salad, and sweet & sour chicken or szechuan steak. The other option is italian - pasta with chicken piccatta or lobster ravoli (there is probably something else on this but i can't remember).

Both our choices include salad and mixed veggies...our beef will have mashed potatoes and our chicken will have rice pilaf.

I am somewhat cheap. I run a business where we do a lot of catering so I thought I'll just do the food. However, I didn't want to use food from my own job so I just stole a few ideas and am doing it at home. I will make green beans (boil the broth with pork, onions, salt, pepper and pour over top the beans) and also the small red potatoes tossed in butter and herbs. I am thinking about buying some salad mix as well. I am getting BBQ meat and buns from a local. I am going to keep all of the food in the fridge in foil pans for 2 days and then heat them the day of the wedding. We are having cake and smores for dessert Smiley cake
